Black Bean and Corn Salad I
This recipe was so easy and SO good! I made it twice in the last 2 weeks and got so many great reviews. It is so refreshing and tasty. You can eat it so many ways; plain, on a salad, with crackers, on rice or in a burrito. Will definitely be a frequent in my house.

Spicy Tortilla Roll-Ups
I just made these for our Superbowl party. I made the filling the night before and rolled them the following morning. So easy to make! I didn't get alot of feed back from them, however, the tray was gone. I doubled the cream cheese as others suggested and I still did not have enough for 10 10' tortillas. I was only able to fill 5. Next time, I will either triple the cream cheese and double the rest or use smaller tortillas. I will definitely make again!

Brownie Chocolate Chip Cheesecake
I LOVE cheesecake and this is one of the BEST and easiest cheescakes I have ever baked. The combination of the brownie and cheesecake was so incredible!! I took the advice of the other reviewers and used Ghirardeli triple brownie mix with the chocolate chips. I accidently baked the brownie on 325 instead of 350 for 35 mins and it came out perfect. I also baked the cheesecake with a pan of water for 50 mins and left it in the oven with the door cracked for an hour afterwards. It came perfect - no cracks!!! I baked this 2 days before Thanksgiving as other reviews suggested. I will definitely make this for every occasion.
