Apple Enchilada Dessert

Reviewed: Sep. 11, 2011
Since we have peaches to use right now I wanted to try something different. Changes I made: I used 5 fresh peaches that were peeled, pitted and thinly sliced, cooked them with about a tblsp sugar and 1/4 cup water until soft. Then I added cornstarch/water mix (about 2 tbsp each) until it was thick. I spooned that over the tortillas and followed the recipe from there. I did have to bake it longer so they would crisp up; total 35 minutes. Very good served with vanilla bean ice cream!

Authentic Louisiana Red Beans and Rice

Reviewed: Sep. 11, 2011
After looking through all the recipes for beans and rice I thought I would try this one. It is very good, but I did add more cajun seasoning (about 2 tsps more) and added habanero sauce in. We don't have access to andouille sausage so I used smoked beef sausage in it's place. I also made it in the crockpot and then transfered it to a pan to finish it. Instead of making the rice seperate I put 1 1/2 cups long grain rice in with it and added about 2 cups of water and cooked it until the rice was done. We used it to make bean and rice burritos and everyone liked them with the addition of more hot sauce. Overall a good recipe!

Old-Fashioned Peach Cream Pie

Reviewed: Sep. 11, 2011
We had just gotten a lug of peaches and I needed to use some of the smaller ones that were ripe so I tried this recipe. Everyone loved it! I did use 3 cups of peaches and put it in a 9" deep dish pie pan. It set up beautifully! Will make this again!

Salted Peanut Bars

Reviewed: Aug. 6, 2011
These are so good! The local cafe has these and I watched someone eat one after another while saying how tasty they were. Of course they won't give up the recipe, but while searching this site I accidently ran across this! This recipe is a keeper!

Pudding No-Bake Oatmeal Cookies

Reviewed: Jun. 20, 2011
I was looking for a way to use up a box of butterscotch pudding mix and came across this recipe. I cut the sugar to 1 1/2 cups, butter to 1/2 cup, used 1/2 cup skim milk instead of evaporated (didn't have any), added 1/2 cup shredded coconut and 1/2 pkg butterscotch chips after everything else was mixed. They were not runny or pasty and set up nicely. I managed to get 24 good sized cookies and even though they are sweet they are good!

Amish White Bread

Reviewed: Jun. 8, 2011
I gave it 5 stars, but I only used 1/4 cup sugar otherwise it would have been too sweet. The dough rose nicely and the loaves baked up perfectly! Everyone loved it!

Tuna Noodle Casserole I

Reviewed: Jun. 5, 2011
This is a good start. I doubled the sauce using triple cheddar blend instead of sharp cheddar, used frozen peas instead of canned, added 1/4 cup sour cream to the sauce. I also added an extra can of tuna and topped it with crushed potato chips. I added my own seasonings since it needed some flavor. It is good if you can't have a lot of salt and need to avoid canned soups.

Magic Peanut Butter Middles

Reviewed: Jun. 5, 2011
These are good and my husband who doesn't like chocolate actually commented on how good they were. I used 3/4 cup of sugar and 1/2 Tbsp molasses instead of the 1/2 cup sugar and 1/2 cup brown sugar and they were perfect! I also made 24 peanut butter balls before I made the cookie dough after reading the reviews on how dry the dough was, but the dough was fine. It is really humid so that probably made the difference. I made 24 cookies and have 10 left. I already know I need to make more!

Honey Wheat Sandwich Rolls

Reviewed: May 28, 2011
I love trying new recipes for breads and rolls and this one will be added to my recipe book! These are very good and taste better than any sandwich shop's rolls! They are also simple to make. I divided the dough into 8 portions and made hoagie rolls. They are a little big so next time I will make 9. We will probably make this our "go to" recipe for hamburger and hot dog buns to. Thanks for sharing!

Milky Way® Cupcake Icing

Reviewed: Apr. 30, 2011
This for the most part wasn't bad, but was very sweet. I think next time I will pair it with a cake that isn't as sweet to see if it balanced better. I used it to ice the Chocolate Chip Cookie Dough Cupcakes that my husband took to work for a benefit bake sale. Someone paid $40 for about a dozen cupcakes and then asked for the recipe!

David's Yellow Cake

Reviewed: Apr. 17, 2011
This was pretty good. It didn't rise as much as I had hoped but I can add a little more baking powder next time. I added some crushed dehydrated strawberries (1/2 cup) and a couple tablespoons water to the batter. I also used 4 whole eggs and used ap flour so I took 4 tablespoons out. I frosted it with a whipped vanilla frosting. It was good and everyone asked for more!

Crispy and Creamy Doughnuts

Reviewed: Apr. 17, 2011
These were really good! I made a half batch and ended up with a dozen doughnuts and doughnut holes. I did only use half the amount of butter in the glaze and it came out perfect. My son ate 4 doughnuts himself and informed me he won't eat store bought doughnuts anymore. Thanks for sharing the recipe! They are like the ones grandma used to make!

Libby's® Pumpkin Cranberry Bread

Reviewed: Nov. 27, 2010
This is very easy to make and very good! I do not use pumpkin pie spice instead I add :2 tsp cinnamon, 1/2tsp ground nutmeg, 1/2 tsp ginger and a couple of dashes of ground cloves. I also add another 1/2 cup cranberries so I can make 2 batches at once and use a whole bag of cranberries. It freezes wonderfully too!

Sinfully Delicious Chocolate Pie

Reviewed: Nov. 27, 2010
I was excited to see this recipe! My grandma made my dad what she called "English Toffee Pie" for his birthday every year while he was growing up. I have only made it a few times and lost the recipe. The changes I make is I use 1 3/4 powdered sugar, 3 oz unsweetened chocolate and put on a crust made from 1/3 cup melted butter, 1 1/2 cups crushed vanilla wafers, and a handful of chopped walnuts. I press it into a 9" pie plate and hang on to a little bit to sprinkle on top. Perfect with whipped cream on top!

I tried these and they were very tasty! I made some with chocolate cake and instead of chocolate chips used Reeses Pieces and topped with peanut butter icing. They are the best!
