Chicken Cordon Bleu II
I loved this recipe as is, it was very delicious. But the second time around I made a couple mods...First I used panko bread crumbs and omitted the flour and paprika for the breading, it made the dish have a little extra crunch. Next, after breading, I browned the chicken on each side in a sautee pan using a little oil or butter whichever you choose rather than adding the bullion and the wine to the pan. (I thought if I did so it would turn out soggy and mushy) After browning the chicken, I then baked it in the oven, the time is dependent upon how thick you pound your breasts out and how long you they have been browned in the pan but 20-30 is a good starting point. (mine took a while but well worth the wait) Lastly, I used the bullion, wine, butter, cream and cornstarch for a sauce that I made entirely separately. It was fab:) One of my new favorites.

Super-Delicious Zuppa Toscana
My new favorite! This recipe is exactly like the popular chain restaurant! I did however make some changes. I used kale instead of spinach, omitted the bacon, and used fat free cream! Turned out fabulous!
