Homemade Pancake Mix

Made a batch of this mix up this morning and then made a double batch of pancakes. We did not have whole grain flour so I used what I had on hand. They turned out great. I added a bit of salt and some vanilla per other reviews. Next time I might add a touch more baking soda. I won't say they were flat (because they were not), but I'd like a bit more fluff. All in all I think we will be keeping this as a staple in our pantry. I will also try adding the whole wheat flour next time around.

Quick and Easy Chicken Noodle Soup

Loved this recipe. I made a few changes simply because I love lots of carrots and celery. It has to be hearty and full of flavor or I just won't eat it. Next time I'm going to add more stock because I used thick frozen noodles and they soaked it all up. That was my fault not the recipes. Thanks for a winner!

E-Z Drop Biscuits

My husband loved these biscuits and this recipe will now be my go-to. I modifed it a bit, but not much. Reduced the cream of tarter to 1/4 tsp., deleted the salt entirely since I used salted butter. Next time I might add Thyme or Rosemary or Sharp cheddar!

Slow Cooker Scalloped Potatoes with Ham

Good recipe - relatively quick and easy. I followed a couple of suggestions in previous reviews and my husband and I loved it. Use milk instead of water and the salt really isn't needed.

Best Chocolate Chip Cookies

Good recipe. I cut the salt a bit because the butter I used was salted and added the Cream of tarter as suggested by another review. I had to bake longer than 10 minutes, but I am sure it is because my oven temp is off. I will use this recipe again and tweak it a bit further.

Fruity Curry Chicken Salad

I used this for a baby shower and it received rave reviews. I decreased the amount of mayo due to reviews saying it was too wet. Bad move on my part as I ended up adding more the morning of the shower since it was very dry (at least to my taste). The salad was a hit - raved about actually.

Spinach Dip with Water Chestnuts

We love this simple and easy recipe. The first time out I followed the recipe to a T, then I started to modify. I've reduced both Sour Cream and Mayo - too dry so now I reduce only the may, maybe 3/4 C. vs. 1 C. I also make sure it is very well chilled prior to serving.

The Best Rolled Sugar Cookies

Wonderful recipe. I hadn't made rolled out sugar cookies in years and found that everything just fell into place using this recipe. Cookies turned out soft and yummy. Cookies were good plain, but amazing with frosting. I had to bake mine a bit longer, but then I have an older oven so that may be expected.
