Baked Ziti I

I love this but modify the recipe above significantly. You can really ruin this as long as you have enough sauce so customize it for your family's tastes. I sauté 1lb hamburger, 1lb ground sausage with the onion and garlic. I use Ricotta cheese mixed w/one egg and then toss the noodles in it before adding it to the pan. I put my sauce down first, but still spray the pan with Pam. I add one 15oz can of tomato sauce to the jarred sauce. I use a whole brick of Mozzarella for this. I slice the Mozzarella and layer the slices as I make it, ending with mozzarella on top. And yes - cover it! Depending on how deep your pan is, will determine how long it needs to cook. For my recipe, I need 60 minutes minimum, then I take the foil off, lower the temp to 350 deg, and bake it for another 20-30 minutes until everything is bubbling and gooey.

Michelle's Coconut Chicken Curry

Loved this - but made the following modifications/additions: 4 cloves garlic, 1 tsp fresh ginger, 2 tbls brown sugar, 3/4 cup roasted cashews, carrots, cubed potato, snap peas, 1/2 tsp cayenne, 5 tbls curry powder, 1 cup chunk pineapple, used coconut oil (instead of vegetable oil) plus one tbls of ghee, added enough low sodium chicken stock to almost cover, simmered for at least a hour. Served with rice. This was a great recipe to use and modify - thank you so much for posting!

Hot Cheesy Spinach Dip

This is yummy! Here's some tips: I used fresh baby spinach, so I didn't add ALL the liquid once I sauteed it in wine, butter and garlic. It would have made the dip too runny. I maybe added 1-2 tbls. Which is too bad because the liquid tasted so good! The wine really adds a great depth to the flavor so try not to skip using it, if you can. Don't let this cool too long once it's out - serve it immediately for best results. Oh - and I will chop up the spinach next time. I may also add marinated artichoke hearts. . that would add a great acid base. This will be a keeper!

Roast Pork with Apple and Onion Gravy

family loved this. It's pretty salty (and I love salt. . ) so next time I will use lemon juice and add my own salt/pepper (instead of using the lemon pepper seasoning), and I will try to find low-sodium pork (or beef) gray. It was very yummy though - goes great with mash potatoes!

Butternut and Acorn Squash Soup

LOVED this recipe! I don't normally like acorn squash but the combination was incredibly tasty. And this isn't too think - it's a very comforting soup that paired great with shredded Mozarella on top.
