Citrus Mousse

Reviewed: Feb. 21, 2005
I'm giving this a five because I after I modified it, it was great, and all my guests loved it. I suggest 1/4 cup lemon juice and 1 cup orange juice. It kind of tastes like those orange push-up pops. I've served it with fruit, and all by itself, and people love it both ways. Serve after a hearty Italian meal for a nice palate cleanser.

Pasta e Fagioli I

Reviewed: May 2, 2006
Used great northern beans (drained them first). Didn't use onions. Used 2 extra cloves garlic. Used vegetable broth instead of chicken broth.

Buttery Rolls

Reviewed: Nov. 28, 2008
BEST dinner rolls EVER. So easy and amazingly delicious. I halved the recipe, and they all fit perfectly in an 8x8 pan. Next time I will add only a couple teaspoons of sugar, as the rolls were slightly sweet as is, and I don't prefer sweet bread.

Beans, Some Like It Hot!

Reviewed: Oct. 1, 2006
The best way to describe this dish, in my opinion, is chilli with an exotic twist...my husband and I have dubbed it "Bombay Chilli." We really, really enjoyed it. I added half the called-for chili powder, and used a can of mixed salad beans instead of a can of kidney beans.

Chicken Fiesta Salad

Reviewed: Oct. 1, 2006
I substituted vegetarian chicken strips for the real chicken, and we ate it cold the next day, which tasted even better than eating it warm. This was SO SO SO SO good!

Spicy Garlic Lime Chicken

Reviewed: Oct. 2, 2006
I made this for my husband and a visiting relative of his, and am giving it 5 stars even though I didn't have any because I'm a vegetarian, the two guys absolutely LOVED it. My husband said it was some of the best chicken he's ever had.

Aunt Teen's Creamy Chocolate Fudge

Reviewed: Feb. 5, 2007
I made a ton of this to give away as Christmas gifts, and I was a little nervous because it was my first time making fudge, so I read up a little bit on how to get fudge to turn out just right...and my fudge came out PERFECTLY! This is such a great recipe, and I suggest finding the fudge-making tips on this site.

Dilly Potato Salad

Reviewed: Mar. 2, 2006
SO good! One reason it tastes so great is you don't have to think about the fact that you're eating gobs of mayo or sour cream - because you're not! This recipe uses plain non-fat yogurt. Don't be scared to try it - you won't regret it! However, we had to add a LOT more dill, some more mustard, lots of garlic powder, salt and a little pepper to really flavor it up. And the longer you let it sit in the fridge before you eat it, the better it tastes! I really can't say enough for this potato salad!

Elisa's Famous Fudge

Reviewed: Feb. 19, 2007
I haven't actually made this yet, but I will say that if you are going to make this recipe (take this from someone who has made TONS of fudge) increase the amount of chips (morsels)! This recipe calls for only 3/4 cup of each kind of morsel...when I make this, I am going to use 1.5 cups EACH. Based on the amounts of other ingredients in this recipe, you need around 3 cups of chips TOTAL for this to come out just right.

Magic Cookie Bars II

Reviewed: Mar. 6, 2007
I love these. I used only semisweet chips, no butterscotch. These bars kind of remind me of Mounds candy bars with the coconut and dark chocolate.

Whole Grain Waffles

Reviewed: Apr. 28, 2008
I never end up liking recipes that use applesauce, so I almost didn't try this one. But I am SO glad I did! I think my search for the perfect whole grain waffle is finally over! The waffles were surprisingly light, not heavy at all.

I use Vegenaise instead of mayo, and I prefer to blend it to make a pastier spread. It tastes sooooo good!

Pecan Squares Cookies

Reviewed: Mar. 6, 2007
I LOVE LOVE LOVE pecan pie, and now I LOVE LOVE LOVE these cookie squares! I used dark corn syrup. And because I used a 9x13 pan, I only used 1 c. of corn syrup instead of 1.5 cups. I kept the crust amount and the amount of pecans the same as the recipe. It turned out GREAT!

Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed: Jun. 7, 2006
I like my chocolate chip cookies to be crunchy thru-and-thru, so I switched the sugar amounts - 1 C. white sugar and 1/2 C. brown sugar. I also used 1 Tbsp. vegetable oil instead of an egg yolk. I refrigerated the dough for about an hour, then formed it into medium-sized balls. These cookies turned out so beautifully...literally, the most picture-perfect chocolate chip cookies I've ever seen. I wish we had a digital camera so I could take a picture and submit it with this review. The only thing I would change about their taste would be to add LESS chocolate chips. I never thought I'd see the day when I'd actually say that, because I am a chocolate freak. But unfortunately, the chocolate is almost the only thing you taste in these cookies. But...they're still great.

Feta Cheese Foldovers

Reviewed: Feb. 21, 2005
I'm giving this recipes five stars because for feta cheese lovers, this recipe is prime. My husband loves these. BUT, feta is a little too strong for me in general, so I could only have a few bites of this. If you can stand the bold flavor of feta, definitely try this recipe.

Tomato Alfredo Sauce with Artichokes

Reviewed: May 6, 2005
I don't even like alfredo sauce, but this is great! Probably because it's not creamy like you would think. It's light and flavorful...but definitely room for personaliztion!
