Dilly Potato Salad

Reviewed: Mar. 2, 2006
SO good! One reason it tastes so great is you don't have to think about the fact that you're eating gobs of mayo or sour cream - because you're not! This recipe uses plain non-fat yogurt. Don't be scared to try it - you won't regret it! However, we had to add a LOT more dill, some more mustard, lots of garlic powder, salt and a little pepper to really flavor it up. And the longer you let it sit in the fridge before you eat it, the better it tastes! I really can't say enough for this potato salad!

Pecan Squares Cookies

Reviewed: Mar. 6, 2007
I LOVE LOVE LOVE pecan pie, and now I LOVE LOVE LOVE these cookie squares! I used dark corn syrup. And because I used a 9x13 pan, I only used 1 c. of corn syrup instead of 1.5 cups. I kept the crust amount and the amount of pecans the same as the recipe. It turned out GREAT!

Chocolate Cavity Maker Cake

Reviewed: Feb. 21, 2005
BEST chocolate cake ever. One thing though...you don't have to add the liqueur...use milk, water, more vegetable oil, a combination of the three, or don't sub anything at all. It turns out dense and terrific if you don't sub another liquid. Milk makes it a little fluffier, and more oil makes it more moist. So whatever you want! It will turn out great no matter what.

Elisa's Famous Fudge

Reviewed: Feb. 19, 2007
I haven't actually made this yet, but I will say that if you are going to make this recipe (take this from someone who has made TONS of fudge) increase the amount of chips (morsels)! This recipe calls for only 3/4 cup of each kind of morsel...when I make this, I am going to use 1.5 cups EACH. Based on the amounts of other ingredients in this recipe, you need around 3 cups of chips TOTAL for this to come out just right.

Vegan Baked Oatmeal Patties

Reviewed: May 1, 2006
I sub'd two egg whites and an extra 1/4 c. nuts (walnuts) for the nutritional yeast, and it worked great. I could only fit about 15 medium sized patties on my cookie sheet, so I pan-fried the rest of the patties (coated in corn starch first). The fried ones were GREAT...the baked ones were somewhat yucky. I will definitely make the fried version again, but not the baked ones. We ate them covered with a little spaghetti sauce.

Veggie Pot Pie

Reviewed: May 10, 2006
I made individual pot-pies by pressing the crust into a big muffin cups tin. The veggies had really good flavor (I added garlic and onion powder, and a little cilantro).

Chicken Pesto Paninis

Reviewed: Nov. 18, 2006
super yummy. i used vegetarian chicken strips instead of real chicken. next time i will omit the chicken altogether, though. the flavor of the green peppers and the onions with the cheese and basil pesto was so good on its own. i don't have a panini press so i wrapped each sandwhich in foil and heated them in a 425 degree oven for about 15 or 20 mins.

Lemon Sugar Tea Cookies

Reviewed: Dec. 2, 2006
I doubled the recipe and they turned out perfect. Followed (doubled) recipe exactly, except for the parchament paper. I just lightly sprayed the cookie sheet with canola oil. For those whose cookies don't seem to turn out, it's not the recipe's fault. Substituting margerine for butter, for example, can make a huge difference in a cookie. There is a good advice article on this site about the "science" behind cookies and how each ingredient affects the outcome. An oven thermometer is also a great tool to have (they cost as little as $4). Anyway, these cookies are great. They manage to be crispy and chewy at the same time. And for us, the lemon flavor is plenty strong.

Sun-Dried Tomato Cheesecake Squares

Reviewed: May 6, 2005
Good, but definitely very rich. The flavor turned out really good though, because I'm too stingy to buy sun-dried tomatoes so I used fresh tomatoes, chopped red bell pepper (key ingredient), and lots of garlic, as well as other seasonings to my own taste. Cut into SMALL squares to serve. Everyone liked them...I was actually surprised how fast they disappeared.

Citrus Mousse

Reviewed: Feb. 21, 2005
I'm giving this a five because I after I modified it, it was great, and all my guests loved it. I suggest 1/4 cup lemon juice and 1 cup orange juice. It kind of tastes like those orange push-up pops. I've served it with fruit, and all by itself, and people love it both ways. Serve after a hearty Italian meal for a nice palate cleanser.

Aunt Teen's Creamy Chocolate Fudge

Reviewed: Feb. 5, 2007
I made a ton of this to give away as Christmas gifts, and I was a little nervous because it was my first time making fudge, so I read up a little bit on how to get fudge to turn out just right...and my fudge came out PERFECTLY! This is such a great recipe, and I suggest finding the fudge-making tips on this site.

Whole Grain Waffles

Reviewed: Apr. 28, 2008
I never end up liking recipes that use applesauce, so I almost didn't try this one. But I am SO glad I did! I think my search for the perfect whole grain waffle is finally over! The waffles were surprisingly light, not heavy at all.

Puggie Woogie

Reviewed: Jan. 13, 2006
Followed recipe exactly. Next time (if there is one) will use other reviewers' suggestions to liven them up a bit. Definitely not healthy, as one reviewer stated. It's fried batter covered in sugar - tell me how that's healthy?

Palmiers

Reviewed: May 20, 2008
I really want to like these more than I do. They turned out so little...I thought maybe they'd be bigger and puffier. And they practically burned...I have an oven thermometer, so I know I kept them at the exact heat the recipe called for, and for the exact time. And I don't like picking the hard, carmelized sugar out of my teeth while I'm eating them.

Japanese Zucchini and Onions

Reviewed: Apr. 28, 2008
Very good. I always appreciate new ways to eat zucchini! A little bland, but I actually like bland sometimes. I used toasted sesame oil instead of teryaki sauce (I didn't have any). Next time I'll add straw mushrooms.
