Ground Turkey Soup

Reviewed: Jan. 14, 2013
The base for this recipe was nice, especially since I love turkey, and I love playing around with soups. I did make a lot of modifications though: I added 4 cups beef broth, 2.5 cups red wine, and 1 cup water. I added 1/2 tsp herbs d'provence (this is like a mix of rosemar, oregano, and some other herbs), 1/2 tsp black pepper, 1/4 tsp chardonnay sea salt. I added 3 celery, about 1.5 cups quartered zucchini, 2 cups chopped green beans, 3-4 carrots, and 2 potatoes quartered - I kinda wing it on my measurements of veggies, the more the better. I then sauteed the turkey with garlic and a sprinkle of cayenne. And added the barley for the 15 minutes but it probably needed 20. I will be making this again, but my rating is for the soup with my modifications. If I had made the original recipe I probably would've given it 2.5/5 since it sounds bland/salty.

Quinoa Side Dish

Reviewed: Jan. 6, 2013
I really love how simple this recipe is, it provides a nice base to play with. Instead of vegetable broth I use low sodium chicken broth and add about 1/8 cup more, I omit the parsley and add about 1 tsp of black pepper. Also, about 5-10 minutes before the quinoa is done cooking, I add chopped zucchini and squash and let it cook for another 10-15 minutes covered. The vegetables cook so perfectly due to the extra 1/8 cup of broth and this makes it a complete side so I don't have to make a separate veggie dish. Enjoy!

Cinnamon Almond Rice Pudding

Reviewed: Sep. 18, 2012
I made this with quinoa but it was the flavor that was lacking, even with adding vanilla extract. Next time I will double the cinnamon and honey, and I might consider cooking with chunky, mashed bananas for a sweeter taste. Also, I chopped the almonds and added them to the quinoa/rice with the other ingredients.

Slow-Cooker Chicken Tortilla Soup

Reviewed: Jan. 30, 2012
This was a great, quick recipe! I followed the suggestions of others and tossed in 3 frozen chicken breasts which I was a little concerned about since it was raw and I'm a little paranoid about that kind of stuff but 2 bowls of soup later, I'm still kickin'. Also, I added a can of black beans and some tapatio, omitted the salt, bay leaf, and cilantro. I cooked this on low for 6.5 hours...perfecto! This was so great, I will definitely be sharing this recipe and making it again!

Too Much Chocolate Cake

Reviewed: Jan. 16, 2012
This cake was awesome!! There were some baker-errors though (oops!) so there are defintely things that I would change. I used a regular circle cake pan and adjusted the cooking time...which I won't be doing next time because the center was still un-done when I took it out. However, even with that mistake my 2 pregnant girlfriends LOVED it...as did I. The sour cream really helps cut the richness and that chocolate overload taste. And, as other reviewers suggested I used mini choco chips. This was fantastic...I will definitely be making this again!!

Slow Cooker Turkey Breast

Reviewed: Jan. 16, 2012
I used a 3lb. boneless turkey breast for this recipe since it's only me and the bf but it still came out tasting amazing!! I took the breast out of it's netting, rinsed and patted dry, and rubbed it down with about 1/2 the packet of onion soup mix and about 2 tbsp. minced garlic. In the crock pot I quartered about 5 or 6 red potatoes, threw in some green beans and chopped onions, and put about 1/2 cup of chicken broth on the bottom (next time I'll probably only put 1/4 cup). I put the breast on top and sprinkled the remainder of the packet onto the potatoes and veggies. Because of our small turkey I had to adjust the cooking time: 30 minutes on high, 4.5 hours on low. It came out AWESOME!! I gave 4 stars because I do think this recipe could use some additional herbs or something, otherwise it was great AND we had leftovers. I'll be making this again!

Fluffy Pancakes

Reviewed: Sep. 26, 2011
These were really just ok..and I followed the directions to a "T". Yes they were tall and fluffy..but they lacked flavor and burned easily. I never have that problem with other pancake recipes. I definitely won't be recommending these or making them again.
