Ceil's Cucumber Slices

Yum! I left out the Green Bell Pepper and decreased the sugar a bit (due to personal tastes). Don't leave out the celery seed. It definitely gives it a little something extra.

Zucchini Risotto

This was my first time making Risotto and it was MUCH easier thank I expected. I halved the recipe and added several diced baby carrots to the onion mixture in the beginning (as suggested by another reviewer). I also used a sheeps milk cheese as I didn't have any parmesan on hand and it turned out delicious! Other reviewers have said the cheeseisn't necessary, but I tried the Risotto before and after adding the cheese and I think that it really adds to the dish.

Chicken Enchiladas II

Great recipe as is (definitely worthy of 5 stars), but I think it's even better if you make the following changes... First, sautee a finely chopped jalapeno with the onion. Second,use the larger (7 oz) can of green chiles. Third, use 2C of chicken and half of the sauce with it. Fourth, if you don't want the dish to be soggy use CORN tortillas. Finally, add a can of green enchilada sauce with the other half of the sauce and use this to top the enchiladas. YUM!

Slow Cooker Lancaster County Pork and Sauerkraut

This was so much better than expected!! I used just a 2 lb pork loin (there are only 2 of us) but left the amount of sauerkraut the same. I also added two Granny smith apple and two TBSP of Brown Sugar. Will definitely make again!!

Eggplant -- Easy, Good and Tasty

Yum! I used canned diced tomatoes with olive oil & garlic and italian bread crumbs with some garlic salt to coat the egg plant. Baked for approx 10 minutes and then flipped and baked for an additional 10. Added the topping and warmed thru. Delicious!

Brown Sugar Smokies

Another reviewer described these perfectly - "Meat Candy"! I shook the smokies and bacon in a bag of brown sugar (didn't bother measuring it). A double batch of these was gone in no time!

Hot Spinach Red Pepper Dip

I used a combinaton of red & green bell pepper (it's what I had on hand). Also used fresh spinach that I sauteed quickly in oan with a small amount of oil & garlic. Also added half a jar of artichokes. Delicious!

Mexican Pesto

I used this recipe as more of a guide on what to put in. I did it to taste - more of some ingredients less of others. I will say that I used far less oil than was called for. It turned out great! Also - try adding a couple spoonfuls to a mashed avacado - YUM :)
