My Own Famous Stuffed Grape Leaves

I loved the rice mixture. I almost preferred eating it alone rather than taking the extra steps to stuff the leaves. I had a lot of leaves that came open and had lots of extra rice because many of my leaves were torn. I don't think I would make these again, I will just buy some.

Waikiki Cornbread

My guy was upset when he found out I wasn't making extra sweet Jiffy cornbread. He actually pitched a pretty good fit, but after he took the first bite of this recipe, all he good do was tell me how good it is and it is the best cornbread that he has ever had!! I did follow another reviewers suggestion and cut the baking mix down to 2.5 cups and increased the cornmeal up to 3/4 cup. I also decreased the sugar to 3/4 cup. My only complaint is that this cornbread is very crumbly.

Macaroni and Cheese V

Great basic recipe. I increased the amount of milk to 2 cups, 3 tbsp of butter, 2 cups of sharp cheddar, and 1/2 cup of a 4-cheese blend. I also nixed the bread crumbs. It turned out awesome.

Mascarpone Stuffed French Toast with Peaches

I made this for my boyfriend's birthday breakfast. He absolutely loved it. It was not overly sweet. I followed the recipe, but I used coconut sugar instead or regular cane sugar for the topping. I also followed another reviewers suggestion and poured the egg mixture over the bread and let it sit while I made the peach sauce before I cooked the toast. I couldn't quite figure out how to get the mascarpone mixture to not spill out the sides of the bread but it really didn't matter. It was delicious and the only suggestion my boyfriend made was to sprinkle a little confectioner's sugar on top the next time.

Sopapilla Cheesecake Pie

Super easy to make and sooooo good! I was going to take a few pieces to work but it disappeared too quick, so I making a whole one to take. Second time around I am decreasing the sugar in the topping to 1/2 cup. And no need to roll out the dough, pinching the seams together worked just fine.

Slow Cooker Mongolian Beef

This was really good. I cut the brown sugar by half because of what I read in other reviews. I used sirloin instead of flank to make it less costly. I also added red chili flakes and a couple splashes of hot sauce to spice up a bit. The only issue I had was that the cooking time seems too long. I cut off the slow cooker after a little over 3 hours and the sauce was a little burnt and very dark. Definitely will make it again and modify a little bit. I think I will do what another reviewer suggested and wait to add the onions until later so they maintain some firmness.

Lentil Chili

Breakfast Sausage Casserole

Too much bread for me, but perhaps it is because I tried to make a healthier version using whole wheat bread and turkey sausage. It didn't work and just tasted like bread. I may try again using a crusty white bread.
