Halloween Brain Dip

Every one at the work potluck LOVED my brain! I used store bought guacomole, so I didn't get the eyeballs. And I used food coloring for the veins...but it never really dried, so it got all over my hands anytime I touched it. I served it in a 9x9 square glass dish and put red salsa around the base like the picture posted. Now what to do with my leftover purple cauliflower?

Butternut Squash Fries

Maybe I cut them too thick, but they were still pretty mushy. I couldn't remember if I was supposed to flip them halfway thru cooking-but it made a mess when I did. Stuck to the pan too.

Simple Beef Stroganoff

My husband liked it and gave it 3 stars. I thought the sauce was too thick, I think next time I would put the sour cream in at the start of the simmer time rather than the end. VERY QUICK & EASY TO MAKE! I only had a half bag of egg noodles, but it ended up being plenty. I also added some corn midway through the simmer time. I didn't add the pepper until I dished it out at the table. I didn't add any salt. With the added corn, I think this makes 6 servings. When I reheat the leftovers tomorrow, I'll probably add a splash of milk so that it's not so dry.

Acorn Squash

Could've cooked longer - squash was a bit stringy. Only the top layer retained the flavoring (butter, cinnamon, allspice). Also didn't realize how difficult it would be to cut a squash in half!

Garlic Cheddar Chicken

This is the 1st time my husband has ever said "I LOVE THIS!" about my cooking. I halved the recipe. Followed someone else's suggestion to sub. olive oil for half of the butter. I put half the cheddar cheese in the bread crumb mix, and the other half sprinkled on top. I also spinkled a little bit of garlic powder on top. I didn't have any parsley so subbed a little more oregano and thyme.
