Oatmeal Peanut Butter and Chocolate Chip Cookies

The flavor was yummy, but I didn't care for the texture which was flat and chewy-crispy. I prefer cookies to be puffy and chewy-soft.

Citrus Chicken and Rice

I can only rate the portions since my substitutions significantly changed the flavor. There was not enough rice, needed 1.5-2x as much. I had to substitute half lemon for orange, and would NOT recommend it! My husband didn't mind, but I was disappointed.

Egg and Sausage Casserole

Good Old Fashioned Pancakes

Just the recipe I was looking for! I followed the top review by sifting the flour and adding 1/2 tsp vanilla. I'd give it 4.5 stars. All out of Bisquik and no baking soda on hand made finding a recipe for fluffy pancakes a bit challenging. These turned out alright. They weren't quite as puffy as I was hoping, but perhaps my baking powder was too close to expiration. I've never used a pancake recipe that put butter in the batter, and these did seem overly moist. I prefer my pancakes to absorb the syrup. I do wish I hadn't burned half of them.

Butternut Squash Enchiladas

Had to make some variations based on what we had on hand: Substitutions: 4 flour tortillas instaed of 8 corn, 2 cloves garlic instead of 1, dandelion greens (from the back yard!) instead of spinach, mozzerella & cheddar cheese instead of goat & cotija, plain greek yogurt instead of sour cream. Omitted: tomatos & cilantro. Added: 1 can pinto beans. Different from anything we've ever had, but pretty good! Would've been better if hadn't burnt the tortillas. Even our picky toddler loved it. Was not very filling though.

Nana Lara's Brisket

Excellent flavor! I only had a 1.5 lb brisket so I quartered the recipe (and also omitted the pineapple). But I used the baking directions from the "Easy Bake Brisket" recipe because it seemed easier. I would highly recommend this ingredient combination though!

Sausage Meatball Sub

I only used this recipe for making the meatballs, which I kept separate from my sauce. Meatballs were good, a tad dry from not simmering the sauce, and I accidentally burned one side of them. They were VERY easy to mix up the ingredients and make though!

Moist Lemon Poppy Seed Cake

The syrup made the cake a bit sour. I have to add a liberal sprinkling of powdered sugar to each slice to make it more palatable. Didn't notice the the recipe note beforehand that cake is supposed to sit a day before serving. Took a bite right after I took it out of the pan and it was awful. Improved within 2 hours, and was much better the next day. Next time I think I'll use maybe half as much syrup. Not sure why other reviewers think cake was too dry...mine was practically soggy before the syrup fully set in, and has stayed very moist. I used fresh lemon for the juice and zest because my mom said it would taste better/stronger (I had originally planned on using bottled juice and substituting something for the zest).

Insane Oven Beef Ribs

Quick & easy. Tender & moist. Yummy flavor! I ran out of olive oil and had to sub. half canola oil, which may be the reason my sauce spread out and burned to the pan rather than thickening up.

Easy Alfredo Sauce I

I didn't add anything extra, and it smells/tastes great! I followed the suggestion to melt butter first, and add cheese a little at a time. My 1.5 QT saucepan was not big enough - it boiled over a little.

Eggnog Pancakes

I do NOT like eggnog, but these are DELICIOUS! I added an extra dash of cinnamon to the batter too. This batter was much thicker than my usual Bisquick-so I had to adjust my cooking technique.

Greek Burgers

We only used the recipe for the sauce (using greek yogurt). We put it on grilled chicken sandwiches. It was ok-would have been much better with the cucumber slices, but we forgot to buy them. Was a little better with some garlic powder.

Basic Bechamel Sauce

I wasn't paying attention and it boiled over once. Otherwise, I followed the directions exactly (except that I only made 2 servings-which was more than enough for 2 people). I also added some grated Parmesan cheese and a dash of garlic powder. My husband (the more advanced cook) said it turned out better than his sauces.

Simple Cauliflower Soup

This was a wonderful use for my leftover "Halloween Brain Dip" cauliflower head, and a great base recipe! I also threw in some leftover carrots & potatoes from a roast, as well as a cup of herbed cheese dip spread...turned out amazing!
