My favorite things to cook
I like baking breakfast/dessert items. I like things that don't require too much prep, and things that I can walk away from and set a timer. Some (or most) of my posted recipes were created by my husband who is an expert cook. He's very clever with leftovers and throwing random things together last minute. But of course, he can never remember the exact measurements of what he used.

Butternut Squash Enchiladas
Had to make some variations based on what we had on hand: Substitutions: 4 flour tortillas instaed of 8 corn, 2 cloves garlic instead of 1, dandelion greens (from the back yard!) instead of spinach, mozzerella & cheddar cheese instead of goat & cotija, plain greek yogurt instead of sour cream. Omitted: tomatos & cilantro. Added: 1 can pinto beans. Different from anything we've ever had, but pretty good! Would've been better if hadn't burnt the tortillas. Even our picky toddler loved it. Was not very filling though.

Nana Lara's Brisket
Excellent flavor! I only had a 1.5 lb brisket so I quartered the recipe (and also omitted the pineapple). But I used the baking directions from the "Easy Bake Brisket" recipe because it seemed easier. I would highly recommend this ingredient combination though!

Sausage Meatball Sub
I only used this recipe for making the meatballs, which I kept separate from my sauce. Meatballs were good, a tad dry from not simmering the sauce, and I accidentally burned one side of them. They were VERY easy to mix up the ingredients and make though!
