Peanut Butter Haystacks

Delicious!!! The saltiness of the chow mein noodles and peanuts goes perfectly with the sweetness of the butterscotch! LOVE these, but ate almost the whole batch by myself :/

Waikiki-Style Meatballs

So good! The meatballs were delicious! The sauce was just a little too sweet for me, but that may be because I used crushed pineapple rather than chunks.

Quinoa and Black Bean Chili

Really good. It makes a lot, so good for freezing or leftovers. The only thing I might change next time is leave out the chipotle peppers and just add hot sauce instead.

Chicken Pesto with Fettuccine and Spinach

Amazing!!! It tasted like something I would expect to get at a great Italian restaurant! My 5 year old loved it, too! The only change I made was that I used just a little over 3/4 of the jar of pesto.

Fresh Strawberry Pie I

I used a ready made pie crust but it still tasted good. The only thing was the jello didn't set right, so it was a litte runny. It still tasted good, though.

Easy Slow Cooker French Dip

So good!! I broil rolls with swiss cheese then dip the meat back into the broth right before serving with a side of au jus. Delicious!

Brussels Sprouts Gratin

This was good. Some of the brussel sprouts got kind of mushy. I'm not sure if I cooked them to long or if it's because I used frozen rather than fresh. Next time I might try adding some more flavors like garlic or onion.

Beer Braised Irish Stew and Colcannon

Great flavor all around! There wasn't as many vegetables as I would have liked. I think I would add more carrots and maybe some green beans to the stew, and cut back on the beef a little bit.

Irish Soda Bread

This was my first time making OR eating soda bread, so I wasn't sure what to expect, but it was a really great dense bread with the raisins adding just enough sweetness. Great with butter alongside dinner. I was also able to cut up the leftovers and use for french toast.

Carrot Cupcakes with White Chocolate Cream Cheese Icing

Delicious! My only complaint is that I couldn't taste the white chocolate or even the cream cheese in the frosting. I feel like there's too much sugar. Maybe next time I'll try cutting out a cup. The cupcakes themselves were delicious and moist! I used the smallest grate for the carrots, so it was time consuming to shred so much. I think I might try carrot baby food next time.

Bacon Cheddar Deviled Eggs

These were good, but I'm not sure they're worth the hassle of adding the bacon. And I really couldn't taste the cheddar. I'll most likely go back to making my regular deviled eggs.

Fabulous Fruit Salad

Delicious! And so easy! The only thing I might change next time would be to cut back on the walnuts a little bit. I couldn't find lemon yogurt so I used strawberry and vanilla yogurt (since I doubled the recipe).
