Apple Oatmeal Crisp
As others have said, this recipe lacks water but tastes very good. I added a cup of water & it turned out like an apple "oat cake" rather than a crumble. LIke others, I just blended the sugar and spice all through in one bowl. Great with homemade whisky caramel syrup on top & ice cream. But I I can see how it would be much drier than expected if no liquid is added. Probably depends on the oats used, too. Next time, I'll probably add 2 cups water or maybe apple juice & put the oat mix on top instead of mixing through.

Beetroot Hummus
I used canned organic chickpeas & local chemical-free beets, just pulled from the dirt. OMG, this is such a delicious lower calorie/healthy fat spread for cucumber slices & carrot sticks!!

Low Carb Cauliflower Leek Soup
I used roasted garlic and Better Than Bouillon brand vegetable broth. Instead of simmering the cauliflower 45 minutes, I roasted it at 425F for 15, while the rest of the soup ingredients simmered. Then I blended everything in the blender with 8oz tofu to make it creamy. Took about 25 mins start to end. I'm sure I could get the same level of creaminess as regular potato & leek soup if I doubled the tofu next time. If you don't have a huge blender, you can do this in batches. I also think you can use onion powder if you don't have leeks or onion and it will be fine. Great recipe!
