Cabbage and Noodles

Reviewed: Jan. 15, 2015
Loved it...very addictive...had two helpings. I didn't have the bacon or onion (which I will put in next time) and put fresh garlic (minced) with the cabbage and a salt. no egg noodles but used penne pasta. Very forgiving recipe...recommend!

Mushroom Kabobs

Reviewed: Jan. 2, 2015
I used my Foreman Grill and it took a good 10 minutes. I couldnt make them very long because of the size of the grill so I had many kabobs. I had to use dry herbs-will make again-Yum

Lemon Pie Bars

Reviewed: Dec. 12, 2014
I halved the recipe (8x8 pan) and it came out perfect. Real Butter shortbread crust is so easy to make after you let the butter soften naturally. Giving them for Christmas gifts and the leftovers I gave to my co-workers and Raves all around!

Addictive Sweet Potato Burritos

Reviewed: Oct. 19, 2013
I followed other reader's suggestions and added black beans instead of kidney beans and added cinnamon to the sweet potatoes. I made it vegan without cheese but I am sure its great with cheese. I had lots of leftovers so I froze them for my lunches which as of this writing are all gone. Gotta make some more!

I added more of what I had (spinach instead of kale) but kept the initial recipe intact and loved it. With the leftovers the next day,I added carrots, more spices and canned lite coconut milk! WOW! Great recipe!

I was surprised no one complaint about it burning. Despite me turning three times, it burned.

Decadent Peanut Butter Pie

Reviewed: Sep. 28, 2013
This was so easy!Everybody loves this pie! I didn't have a chocolate crust just a regular graham crust so I poured heated hot fudge to coat the bottom and refrigerated it while I made the filling. WOW!! Son says its a very creamy Reese's cup.

Make-Ahead Vegetarian Moroccan Stew

Reviewed: Sep. 27, 2013
I used regular vegetable stock so did not add any salt. I doubled up on the sweet potatoes, used fresh spinach (not a fan of kale), doubled up on garbanzo beans no lentils (not a fan). Kept everything the same...spices Heavenly! Do make this, YUM!

Perfect Baked Jerk Chicken

Reviewed: Aug. 31, 2013
This is the second time making this great recipe. I found it a bit light on the spices the first time around so I doubled the spices and oil with my 4 lbs of gigantic chicken breasts (did not double the salt). I put everything together in a zip lock bag and marinated all day. Baked until they were dark brown and sizzling. Great!!

Blueberry Crisp II

Reviewed: Jul. 22, 2013
I love this recipe! I had only 3 cups of blueberries and forgot to lower the sugar and it was a bit sweet. Also next time I may adjust the sugar if the blueberries are sweet too. But we still loved it. My grown son, who doesn't like fruit or berry desserts ate all of it!

This was so easy to make and fall of the bone tender after only 6 hours. Highly recommend--if you are in a hurry you can use your favorite bbq sauce bottle.

Slow Cooker Chicken Marrakesh

Reviewed: Apr. 24, 2013
This is a keeper! I gave this to my "burn jello" fiance to make for our dinner when I went to work. I told him to use boneless thighs and reduce the salt to 1/2 tsp and use salt-free tomatoes. It came out heavenly. I was going to add more spices when I got home but it smelled so good when I got home that we ate it right away. I made broccoli slaw with it and it was a nice cool compliment to the warm chicken.

This is so good. I followed the recipe except I didn't have Dijon but went with yellow mustard and didn't have lemon-pepper but substituted 1/2 portion pepper. Totally recommend!!

Baked Orange-Glazed Chicken

Reviewed: Oct. 28, 2012
This so good! I put everything together (half the salt because I'm on a sodium restricted diet)in a large plastic zip-lock bag breaking up the orange zest in the bag and marinated it for an hour. I took the chicken out onto the baking sheet and poured 1/2 the liquid over all of it and baked it for 1/2 hour. It wasn't as brown as the photo but it was definitely orangy and very moist. I highly recommend!

Gluten Free Danish

Reviewed: Jan. 25, 2012
We loved these. I had to substitute vanilla flavored coconut milk ( I am allergic to dairy) for milk and margarine for butter. I added an egg because one of the reviews mentioned they tasted like pancakes. I left out the vanilla from the icing because the coconut milk had vanilla in it Granted, they don't taste like the danish we remember but they are soft, sweet and yummy. Hubby loved them. Thanks for the recipe!
