Tortillas II

The best tortillas ever! These are a little harder to roll out! They are totally worth the work! I had to use more water than it called for. I also doubled the batch and made the same amount a single batch would make. First time I made these, they didn't last long enough for my husband to come home from work!

Jumbo Fluffy Walnut Apple Muffins

A great recipe to start with. I would try adding a little nutmeg or something. If baking in normal size muffin pans or small ones, I found that they baked perfectly at 20 minutes at 375 degrees f. Depending on your oven you may need to cook a little longer. These were perfectly moist.

Maple Baked Beans

I have a sweet tooth but this dish was waaay too sweet! I'd cut back on the maple syrup. Maybe if you add bacon that could help cut the sweet too. Sorry to say that I couldn't finish my helping of this and did not save the rest.

Taco Seasoning I

This is an excellent recipe! A great idea to do after Thanksgiving: use this seasoning and reheat thanksgiving turkey with a little olive oil and water. Then treat it just like you would for a soft taco! No more getting sick of those turkey sandwiches!

I don't know... some wanted flavors are a little lacking when following recipe exactly. Maybe I'd try using butter instead of shortening next time. This recipe is good but I think it could be better.

Easy Chicken Enchiladas

I sprinkled a little bit of cayenne pepper on top to add more color and give more heat. I'm very sensitive to spicy foods but felt this one needed more kick. This recipe is perfect with that addition. I also used the tortillas 2 recipe (double batch but made 12 balls for tortillas) on here. There's nothing like homemade tortillas!

Costas French Market Doughnuts (Beignets)

These beignets were good but a bit on the bland side. I added some cinnamon, nutmeg and cloves to heighten the flavors. It really needs something added. The spices helped and I think I may make some kind of chocolate sauce or strawberry sauce for these to dip in. The work that goes into these is a little much for someone who wants to find easy and fast recipes. Luckily I have good time on my hands and understand some things are well worth the wait. I had problems adding in the last bit of flour and it just wouldn't mix. I added water to help and made a stiff dough. If I make these again, I would add some spices right into the dough. Update: I made a chocolate sauce to put on these and they were a lot better!!!
