Hi! My name's Rachel and I'm 22 years old. I've been married for 2 years now, and have been cooking dinner for my husband and I every night. My husband and I live in sicily now, but we're from south florida. I grew up cooking and baking with my mom, but I didn't find my own love for cooking until about a year ago. I'm always trying to expand my abilities, learn new techniques, use new ingredients, and taste delicious food!
My favorite things to cook
My favorite things to cook are southern-style comfort food and fruit-inspired cupcakes. I also love stir fry and making my own california rolls.
My favorite family cooking traditions
My favorite traditions are cooking for big holidays with my mom. We always did big Easter and Thanksgiving dinners with traditional southern foods. We also liked to be a little silly with Christmas Eve dinner. Since we would go to my grandmother's for Christmas dinner, we'd make something unexpected the night before like enchiladas, or chili. I also loved doing big Sunday breakfasts.
My cooking triumphs
My cooking triumphs have been mostly in baking. I've been able to turn out some pretty awesome cupcakes in the last six months and my mother actually told me that she thinks I have surpassed her! I'm also pretty proud of my accomplishments in perfecting several soups that I make at least once a week!
My cooking tragedies
Some of my cooking tragedies have been in beef. I can make a pretty good slow cooker pot roast, but other than that my husband just takes steaks to the grill. I can't grill and I have been known to turn out more than a few unfortunate steaks from the kitchen. I prefer to cook with chicken, fish, or pork anyway! =)

Italian Sausage Tortellini Soup
Pretty good! I used a whole pound of ground italian sausage to make it heartier and no carrots. I think I may add spinach or perhaps a bean next time. Really easy and delicious with garlic toast.

Mom's Zucchini Bread
Delicious! Grating zucchini is a pain, but the recipe is very good. One loaf for me and one to give away =)

No Bake Choco-Peanut-Oatmeal Cookies
Really tasty! Only problem I had was they stayed sort of gooey despite cooking properly. This recipe could easily be modified to make your own healthy granola bars too.
