Plum Blueberry Upside Down Cake

I'm surprised at my reaction to this cake, given all the super positive reactions on the site. The cake was very easy to make, and looks absolutly beautiful. However, I find it to taste sort of bland. Next time I make a plum cake, I might make it like a coffee cake with a crumb topping or something. Or maybe simply adding cinnamon or other spices to the white cake would spice it up. I don't think I'll make this particular recipe again...

Garlic Top Sirloin Pot Roast

This was a BIG hit! I think I must also have one of those fast cooking slow cookers - I cooked it on high, and it was done in under 5 hrs. I also put in some mushrooms instead of carrots, and used beer instead of water. This did not last long!

Whole Wheat Refrigerator Rolls

These were amazing. I will say they had me a big nervous at first. The yeast proofed beautifully, dough came together perfectly... but after letting them sit in fridge overnight, they showed no signs of rising. So I let it sit in there overnight and all the next day - then I let the dough come to room temp, formed into rolls (some I rolled into balls and popped into buttered muffin tins, others I shaped into sandwich roll shape), let them rise a little, and baked. Perfectly light and great texture. I will say that next time I make (soon,I'm sure) I'll likely cut back on the sugar as they were too sweet for my tastes. I might also add some herbs to make them a little more savory. I used butter in place of the oil, and will likely continue to do this. Thanks for the great, easy recipe!

Cheddar Pear Pie

This was amazing. I made it with combination of two types of pears and some granny smith apples. Next time, I might even make it as a crumble/crisp because the crust was not even needed!

Easy Vegan Whole Grain Pancakes

Mmmm I am a fan! I didn't have rye flour, so used ww with a little buckwheat and flax mixed in. I also used almond milk instead of the soy. Then I mixed some frozen blueberries in and topped with real maple syrup. YUM. Update - made these with rye flour today and fresh blueberries. Forgot how good these are!!

Grandma's Fresh Apple Cake

This was really good and easy. I was looking for a quick and easy recipe to make at my boyfriend's bachelor pad... with few ingredients and using no fancy equipment. This was perfect. He does not even own any baking pans, so I actually baked this in a coffee can - and it was great - like a giant muffin. I added an extra egg, and a little milk to get the batter to the consistancy I wanted, perhaps b/c I used 3 apples, which was prob a little more than 2 cups, and baked it longer b/c of the coffee can (about 1 hr and 10-15 mins). This dissappeared in less than 24 hours, and I will definitly make again.

Super Moussaka

This was actually quite yummy. I could not find bulgar, so i substituted whole wheat couscous. That worked nicely, and made a yummy dish. It was not like "traditional" meatless moussakas I've had, but my guests liked it anyway. Next time, I'll add some mushrooms to the mix, and maybe some cheese.

Tempeh Mock Tuna Salad

YUM!! I will confess... I had my doubts about this while I was putting it together. I played around with the recipe a bit - using sweet pickles instead of dill, adding chopped carrots for extra crunch, and skipping the seaweed, simply because I didn't have any at home (tho I might get some now simply for this recipe!) This is great straight out of the bowl, and I'm sure it will only get better as the flavors meld. I'm planning to enjoy a big scoop of this on top of a green salad... YUM! Thanks.

These are so good. I made them exactly as the recipe said and they are getting GOBBLED up at my office. :) You probably COULD cut the choc chips... but why would you? The more chocolate the better, right? Thanks!

Colonial Brown Bread

Despite the word "sweet" in the descriptor line, I did not expect this to be as sweet as it is. It is rather tasty - next time I'll cut some of the sugar and try for a more savory version. As is, this was a great tea bread with honey butter, or jam, or made into a decadant french toast.

Apricot Bars I

It is hard to stop at just one! I used almonds rather than walnuts, and baked it longer the first time (it just looked un-done). Next time I make these, I probably will grease the pan too, because they are hard to get out once they've cooled! I can't wait to share these little gems!

Jay's Signature Pizza Crust

This is perfect pizza dough. I did use 1 cup of whole wheat flour in the recipe, and mixed in enough white flour until not sticky (it was a little more flour for me than in the recipe). I let it rise (it rose up beautifully), then put it in the fridge overnight before baking. I had enough crust for two BIG pizzas - could have even made three! I will never buy those trader joe's doughs again! This was flavorful all on it's own, and also when I brushed olive oil and garlic powder on the partially baked crust. YUM.

Hearty Breakfast Cookies

This is my new favorite cookie. I made them for a camping trip, and they were a big hit with everyone! Tasty, but did not give you the sugar crash that other cookies can. These really can be eaten for breakfast, as the name says! I made these with soy milk instead of water/buttermilk and oat bran instead of the wheat germ (it's what I had in the house) and they were perfect. I've made them again, and like to experiement with the additions. My current favorite is raisin/choc chip/cashew. YUM!

Exquisite Yeastless Focaccia

This was tasty. Not like traditional focaccia, but yummy all the same. I topped mine with carmalized onions, garlic, and feta cheese. It was not hard at all as other reviewers mentioned. Maybe they made it too thin? I followed recipe, and it did not cover the entire bottom of the pan. I could have made it in an 8x8 and filled it edge to edge.

Cinnamon Pear Frozen Yogurt

I love it when something this simple is so tasty! I made this with three fresh peaches, pureed with a little vanilla, about half the sugar, and non fat yogurt. I'm already working on other variations in my head. In playing with recipes - I'd advise that you keep it "healthy" with fruit based recipes. IE - adding one whole banana and fresh vanilla beans is excellent. However, sweeter additions - I tried peanut butter cups - seem to clash with the tart/sour flavor of the yogurt.

Low-Fat Blue Cheese Dressing

This is good. I think there is a little too much onion for my taste. (Most reviewers said garlic, but I added a whole clove, and tastes properly garlicy.) I used a sweet vidiala onion too - I'd cut that in half (or less) next time. I also added a bit more blue cheese than called for (wrecking the low-fat part!) and added black pepper and a tiny bit of dill to the finished recipe. I will probably continue to play with this recipe.

Vanilla Ice Cream V

Yum yum yum. I'm so happy I found this easy recipe. I made it b/c I had all the ingredients in my kitchen. It was so quick and easy I'm already enjoying my ice cream! I can't wait to play with this recipe. Thanks! (PS - converted to 8 servings for my 1.5 qt ice cream maker.)

Cream Cheese-Filled Coffeecake With Fruit Preserves and Crumble Topping

This was a huge hit in my office! (TGIF Cake!) The cream cheese filling was amazing, and I used a homemade strawberry/pineapple jam. I did add a bit of cinnamon to the cake batter, too, based on other reviews of cake being bland. I did not find it to be bland at all. My one complaint was that after cooking for 45 mins, the cake was still runny according to my fork test. So I left it in longer and the sides and top ended up a little too done, while the middle is still a bit soft. Probably because I only had an 8" square pan, not a 9"... next time I will either get a new pan, or lower the oven temp and bake longer.

Grandma's Lemon Meringue Pie

This is the first lemon meringue pie i've ever made, and it was a home run out of the park! I must confess, while making it, I was not sure if it was going to turn out. I was not sure if the lemon mixture was thick enough... tho the meringue was PERFECTION. I thought I might have a crust and meringue pie with a liquidy middle. But I let it cool on a rack after baking till room temp, then tossed in the fridge for about an hour. When I sliced, it was a perfect pie. Tart and light and delicious.
