Red Velvet Cake I

I made this using the changes indicated in other reviews, and it came out pretty well. Baked up nice and fluffy in the oven. I only had .25 ounce of red food coloring, but that still made the cake fairly red. (I can't imagine what 2 ounces would have looked like!) I made this with the chocolate cream cheese icing in the frostings and icing section, and it went very well together. Not my all time favorite cake, but good for a change.

This was great, and did NOT last long. It made a huge pan, and I had hardly any leftovers. I am a vegetarian, so I substituted TVP (texturized veggie protien) for the ground beef, and next time I think I will use the fake frozen ground beef. I will definitly be making this again!

Hearty Breakfast Cookies

This is my new favorite cookie. I made them for a camping trip, and they were a big hit with everyone! Tasty, but did not give you the sugar crash that other cookies can. These really can be eaten for breakfast, as the name says! I made these with soy milk instead of water/buttermilk and oat bran instead of the wheat germ (it's what I had in the house) and they were perfect. I've made them again, and like to experiement with the additions. My current favorite is raisin/choc chip/cashew. YUM!

Irish Brown Soda Bread

Even though I left it in the oven a touch too long (I thought 30 minutes could not POSSIBLY be enough, but I think it may have been!), this was great. It was greatly appreciated by my official Irish taste-tester as well. He said it was the most "authentic" Soda Bread I have made so far...

Super Moussaka

This was actually quite yummy. I could not find bulgar, so i substituted whole wheat couscous. That worked nicely, and made a yummy dish. It was not like "traditional" meatless moussakas I've had, but my guests liked it anyway. Next time, I'll add some mushrooms to the mix, and maybe some cheese.

Batter White Bread

This makes a super easy and very yummy white bread. I used butter as my shortening and on top, and it was decadant! I was planning to make french toast with the bread, but it got eaten too quick! I just made it again substuting a cup of wheat flower for one of the cups of white, and using olive oil, and it made for a much stickier dough (you even might have to eliminate some of the flour, and use your hands to combine) but it is still quite good!
