Whole Wheat Banana Nut Bread

While this does not compare to my old family recipe - lots of white sugar, white flour, oil - this is an amazing banana bread, especially considering how healthy it is. It is easy to add other flowers (I subbed a little flax meal, soy flour, and protein powder with good results.) I did not have any nuts, so left them out - but next time I would likely add some raisins, cranberries, and/or chopped up apple. Could use a little texture/extra sweetness. I will be making this again.

Exquisite Yeastless Focaccia

This was tasty. Not like traditional focaccia, but yummy all the same. I topped mine with carmalized onions, garlic, and feta cheese. It was not hard at all as other reviewers mentioned. Maybe they made it too thin? I followed recipe, and it did not cover the entire bottom of the pan. I could have made it in an 8x8 and filled it edge to edge.

Rich Chocolate Frosting

This is pretty tasty. I halved the recipe, and as other reviewers said, that was MORE than enough for a 9' two layer cake. I divided the recipe - adding chocolate to part (about 2/3) and leaving the rest white for piping. I found that I needed to add more vanilla extract to the whole recipe for flavor, and even using less sugar than called for, it was too sweet for me. I added a touch of almond extract to the chocolate mix, which added a nice touch (some sort of liquor would also be nice -but I didn't have on hand.) But this is a tasty icing. I put it on the Too Much Chocolate Cake - and we'll see tomorrow if everyone dies of sugar overload. :)

Easy Vegan Whole Grain Pancakes

Mmmm I am a fan! I didn't have rye flour, so used ww with a little buckwheat and flax mixed in. I also used almond milk instead of the soy. Then I mixed some frozen blueberries in and topped with real maple syrup. YUM. Update - made these with rye flour today and fresh blueberries. Forgot how good these are!!

Cinnamon Pear Frozen Yogurt

I love it when something this simple is so tasty! I made this with three fresh peaches, pureed with a little vanilla, about half the sugar, and non fat yogurt. I'm already working on other variations in my head. In playing with recipes - I'd advise that you keep it "healthy" with fruit based recipes. IE - adding one whole banana and fresh vanilla beans is excellent. However, sweeter additions - I tried peanut butter cups - seem to clash with the tart/sour flavor of the yogurt.

Low-Fat Blue Cheese Dressing

This is good. I think there is a little too much onion for my taste. (Most reviewers said garlic, but I added a whole clove, and tastes properly garlicy.) I used a sweet vidiala onion too - I'd cut that in half (or less) next time. I also added a bit more blue cheese than called for (wrecking the low-fat part!) and added black pepper and a tiny bit of dill to the finished recipe. I will probably continue to play with this recipe.

Whole Wheat Refrigerator Rolls

These were amazing. I will say they had me a big nervous at first. The yeast proofed beautifully, dough came together perfectly... but after letting them sit in fridge overnight, they showed no signs of rising. So I let it sit in there overnight and all the next day - then I let the dough come to room temp, formed into rolls (some I rolled into balls and popped into buttered muffin tins, others I shaped into sandwich roll shape), let them rise a little, and baked. Perfectly light and great texture. I will say that next time I make (soon,I'm sure) I'll likely cut back on the sugar as they were too sweet for my tastes. I might also add some herbs to make them a little more savory. I used butter in place of the oil, and will likely continue to do this. Thanks for the great, easy recipe!

Vanilla Ice Cream V

Yum yum yum. I'm so happy I found this easy recipe. I made it b/c I had all the ingredients in my kitchen. It was so quick and easy I'm already enjoying my ice cream! I can't wait to play with this recipe. Thanks! (PS - converted to 8 servings for my 1.5 qt ice cream maker.)

Fruit Pizza I

This got me RAVE reviews at my Easter dinner. It looked stunning, and I was afraid it would be all looks and no substance - but I was wrong! I actually mixed the cream cheese with some whipped cream (i made fresh whipped cream) and still thought it was a little cream cheesey plain, but it was wonderful with the cookie and fruit topping. I will absolutly be making this showstopper again!

Creamy Au Gratin Potatoes

So, It turns out that I just don't like scalloped potatos. I say that because I thought this recipe was kinda bla, but others at my table RAVED about it during the meal and in thank you notes afterwards. I used a mixture of cheeses (cheddar, montery jack, parm, and even a little cream cheese) - cooked it the day before (which was good, because the sauce bubbled over and made a giant mess) and simply reheated the next day. I woulld probably not make this again for me, but will have to the next time I have a dinner party!

Maple Dill Carrots

I loved these. Simple, few ingredients which I had on hand. (I used dry dill, and it was great.) I also just boiled carrots till done, then drained and mixed in butter/sugar/dill mixture. Yum!

Addictive Sweet Potato Burritos

These were pretty good - not sure I'd call them addictive, but def healthy and tasty. (And easy) I did use the black bean sub as suggested - next time I might leave the black beans whole, and just mix the bean mix together with the sweet taters before stuffing. It needed a little "something" else, but I can't quite decide what... I'll have to experiment and find out!

Angel Chicken Pasta

This was well enjoyed at my home! I doubled (approx) the wine, and added my own seasonings as well (garlic and rosemary on this first batch), and it was devoured. (I also used cream of M, cause it had it on hand.) Usually in our house, the pup gets to enjoy leftover chicken dishes (they don't reheat real well in the micro) but I tried to give him the last breast of this dish, and was not allowed! I'll def be making again.

Apricot Bars I

It is hard to stop at just one! I used almonds rather than walnuts, and baked it longer the first time (it just looked un-done). Next time I make these, I probably will grease the pan too, because they are hard to get out once they've cooled! I can't wait to share these little gems!

Scottish Shortbread IV

These are simple, easy tasty cookies. I was going to top them with some melted chocolate, or make some with sugar on top as others have suggested... but after the first batch came out of the oven, I liked them as is! I did add some vanila and salt as other suggested. Next time, I might make them smaller and/or thinner since I like them extra well done. Thanks for this great one!

These are delish! I have tried several biscut recipes in the past, with lackluster results. These were super easy and SO good. One note - probably obvious, but I forgot so... - if you sub regular salted butter for the shortening, make sure you cut back on the salt, or your biscut will be salty. They'll still get gobbled up, but would be better with less salt. These will be featured at my house on a regular, I can guarentee that!

Cream Cheese-Filled Coffeecake With Fruit Preserves and Crumble Topping

This was a huge hit in my office! (TGIF Cake!) The cream cheese filling was amazing, and I used a homemade strawberry/pineapple jam. I did add a bit of cinnamon to the cake batter, too, based on other reviews of cake being bland. I did not find it to be bland at all. My one complaint was that after cooking for 45 mins, the cake was still runny according to my fork test. So I left it in longer and the sides and top ended up a little too done, while the middle is still a bit soft. Probably because I only had an 8" square pan, not a 9"... next time I will either get a new pan, or lower the oven temp and bake longer.

Plum Blueberry Upside Down Cake

I'm surprised at my reaction to this cake, given all the super positive reactions on the site. The cake was very easy to make, and looks absolutly beautiful. However, I find it to taste sort of bland. Next time I make a plum cake, I might make it like a coffee cake with a crumb topping or something. Or maybe simply adding cinnamon or other spices to the white cake would spice it up. I don't think I'll make this particular recipe again...

Not sure these need another 5 star, but they deserve them! I usually half this recipe (not because a full batch would not dissappear quickly, but so we don't STUFF ourselves!) This is a great cookie.

Slow Cooker Beef Stroganoff I

This WAS gobbled up, however, my meat eatin man said it was kind of bland. He prefers the other crock pot beef stroganoff on this site (with cream of mush soup). I made it pretty much as written, except I cooked up some onions and mushrooms and added them. (Which should have made it BETTER, I would think!) Not a bad one, but I will probably not make again.
