My favorite things to cook
Hello, my name is Mari and I'm a carb junkie. Yup. I love to bake. I have nothing to hide- just made a batch of butter loving biscuits as a matter of fact. :) I love to cook a variety of dishes from soups/stews to pot roast and meat loaf. Comfort foods are my specialty but you can catch me making a batch of fried rice or a plate of tostones every now and then.
My favorite family cooking traditions
My grandmother meant the world to me. I lost her when I was 19 and couldn't bear the thought of losing her. When going through her things, I inherited her orange enamel-covered baking dish. That pan had made some mean lasagnas and I swear my lasagna tastes better just because it's been baked in that same pan... chips, dings and all.
My cooking triumphs
Geez. I just asked my sweet husband what he thought my best dish was. The answer? "Vengeance." Haha, funny boy. I don't know that I have a particular triumph so to speak. I love putting on my apron and seeing what I can whip up from my pantry. I can make a mean flan though. Ok that was random but I just thought of it and wanted to share. End scene.
My cooking tragedies
Are you kidding? We'd have to rewind to 1985 with me volunteering to cook breakfast for the family on a Saturday morning. My specialty was french toast. Flat french toast. A spatula with just the right amount of force and VOILA! Perfect sense to my then 8 year old mind.

Beef and Cabbage Stew
This was delicious! Threw in some frozen corn while I was at it- yum! The whole family loved it. :)

Yummy Sweet Potato Casserole
This is hands down the best sweet potato recipe I have ever found. It completely lives up to it's name. Starting from scratch (peeling/boiling/mashing) was definitely the way I go- the texture was spot on and the topping was heavenly. I'm not allowed to attend anymore holiday dinners without this in tow.

Oriental Vinaigrette
I made this tonight and it was delicious! I didn't have dijon mustard, so I used regular yellow mustard and threw in some toasted sesame seeds for looks/texture. I added the ingredients into a pint size canning jar and gave it a good shake. I can't wait to use this on my lunch salad tomorrow. :)
