Red Broccoli Salad

Reviewed: Jun. 20, 2008
Excellent, with the following changes: 4-5 strips of lean, cooked turkey bacon chopped (2 lbs of bacon is just too much, and you can save on the fat content), I substituted a mix (that I found already packaged together) of dried raisins and cranberries for the grapes, used both a little red and green onion (I eyeball everything, don't usually measure), used the new olive oil mayo that is on the market, (low fat and better for you), kept the dressing measures as is (but used cider vinegar to cut the tart), and substituted some cashew peices for the almonds (I bought a cheap tin of broken pieces and toasted them slighly in the oven). Everything else, I kept the same. This was so good! My husband raved and usually passses on raw broccoli. This is delish and good for you if you make a couple of variations! My version is very similar to that of Sweet Tomatoes restaraunt. Thanks for the great recipe!

Cousin Cosmo's Greek Chicken

Reviewed: Jun. 8, 2008
Average Dish, Pretty salty, and just not as yum as I hoped it would be. However, my hubby loved it, so perhaps I will tweak it a little more and give it another shot in the future. Perhaps some fresh basil, full fat Feta will do the trick.

Corn Dip II

Reviewed: Jun. 7, 2008
I just don't get the raves about this dip. Maybe it's a mid west thing? I am not sure. Regardless, I have been in the SW my whole life, so maybe my expectations/tastes are a little different. It didn't matter what I did or added to this dip (cold, heated, salsa, chili powder, garlic, black beans, etc.), it just was not exciting and was certainly nothing I would go out of my way for. It was just kind of a blob of too much white and yellow stuff with no interesting flavors. I would never make this again let alone serve it to anyone. Can't give it one star, because it was edible and not atrocious, just not something to get all "yippee" about...not at all. I just don't understand the raves. Oh, well, different keeps for different peeps. I say, don't waste your time and calories. If you are a west coaster, steer clear.

Cathy's Creamy Chicken Bake

Reviewed: Sep. 5, 2002
Hubby loved this: "It's a keeper", he says. A nice, chicken dish. Ironically, because I used low fat soup and cheese, a little skim milk would have helped to sauce it a bit more. (I too, put the stuffing on the bottom of the pan.)

Awesome Slow Cooker Pot Roast

Reviewed: Sep. 5, 2002
Good, but basic. I like to dress it up with more spices (italian etc.) and a bay leaf. I appreciate any good slow cooker recipe, so thanks much!

Field Grade Spaghetti Sauce

Reviewed: Dec. 21, 2001
This is a wonderful recipe! If you like things with a unique flair, try this sauce. My husband loved it. I bet it would make a superb lasagna sauce as well. You can add extra seasonings to your taste, as it simmers. GREAT RECIPE! THANKS!

Spicy Tortilla Roll-Ups

Reviewed: Dec. 21, 2001
This is a great recipe. I have had it in my recipe box for years. For a bit of different flavor, try adding a few dashes of garlic powder (the kind with parsley bits in it). It' great!

Cauliflower Casserole

Reviewed: Dec. 3, 2001
I'm not sure why this seems to be getting such glowing reviews. I thought it was dry and uninteresting. I really like cauliflower, but I didn't like it this way. . .oh, well, different strokes for different folks!
