Mini Pineapple Upside-Down Cakes

I have made this recipe as is and tried it using the pineapple cake mix as others mentioned and I have to say I love the yellow mix with the fresh pineapple juice as you have used. I think the pineapple cake has an artificial taste. The next time I make it, I"m going to try crushed pineapple and will double the brown sugar and butter.. we like it sweet. Thanks for a keeper.

Cauliflower Casserole

I made this but I roasted the cauliflower with chopped garlic in the oven and put that into the casserole dish. For me, there was too much butter so next time I'll cut back. I also added a litte grated asiago cheese just to kick up the flavor. It was very good.

Slow Cooker Carnitas

This is sensational! After reading the reviews, I left out the cinnamon, added a teaspoon of chili powder, and made a garlic paste with 4 bulbs. Then doubled the dry spices. Slow cooked on High for 6 hours, shredded, and put into oven for 20 minutes..This is a keeper. YUM.

This is very good but was just a bit sweet for me so I added a litte more mayo and like another person commenting added some eggs, dry mustard, and paprika.
