Chicken Breast Stuffed with Spinach Blue Cheese and Bacon

Reviewed: Feb. 22, 2012
Fantastic, family loved it... said they felt like it was from a gourmet restaurant! I was going to make some with blue cheese and some with, mozzerella and sour cream per another reviewers comments but in the end I didn't bother separating it and mixed it all together with fresh chopped spinach instead of frozen and the crumbled bacon etc. I salted and peppered both sided of the chicken before I spread the mix on, and added 2-3 asparagus shoots before folding and securing with toothpicks. I skipped the breading and browning process and just set the breasts inside a greased pan (I'm horrible and used the bacon fat and some extra salt... but it was OH SO worth it!) I sprinkled the top with some parmesan cheese before putting in the oven. I had some mix left over, so I made some mashed potatoes and blended it all together with some extra sour cream, butter, and bit of milk... I couldn't tell which tasted better the chicken or the potatoes!

Ghirardelli Rocky Road Cupcakes

Reviewed: Oct. 10, 2011
My family really liked the toppings and the chocolatey taste was definitely there but they turned out very dry, and had a texture more like a muffin. They went down easier the next morning with some butter spread on them.

Tomato Bisque III

Reviewed: Sep. 14, 2011
Since I found this recipe I have been using it as a base for a couple different dishes and it's been fantastic every time! I used tomatos from the garden to make 1 to 2 cups of fresh sauce instead of tomato paste, it gave extra volume but the taste was still great. I don't care for nutmeg so I never used it, but everyone who's tasted it has been really impressed. Once I added oregano and basil, for that I chopped up zucchini and mixed it with some small cubes of mozzerella (or brick) and cooked ground italian sausage... poured the soup on as a sauce mixed it up a bit and baked it... It's now a family favorite! Also used this recipes to make a yummy chicken tortilla soup... just add chicken, maybe some corn, and used cumin, cayenne and paprika for seasoning... another family favorite!! Thank you for posting this recipe my family has been loving it!

Cozy Cottage Beef Stew Soup

Reviewed: Apr. 27, 2012
Got pressed for time so I didn't follow the recipe exactly, like cooking it in a pot and using meatballs. But turned out great, everyone kept going back for more! Definitely will make again... but I'd still stick to the meatballs, they turned out great.

Asparagus Pie

Awesome! Skipped the lemon and added a smidgen of cayenne pepper, also added ham chunks and a layer of shredded cheese to make this a main course. Went over really well and I will definitely make this again. Can do just about anything with this dish, can't wait to experiment!

Roast Chicken with Rosemary

Reviewed: Jan. 23, 2012
I'm a rotisserie chicken lover usually, but this turned out really good. Even though, I applied other reviewers advice by brining and using additional ingredients and herbs, the rosemary stood out pleasantly. I would definitely use this recipe again, whenever I make roast chicken, mostly because the vegetables underneath the rack turned out so fabulous! I read someones review that they salted baby carrots and potato quarters and roasted that on the bottom of the pan with chicken stock... I did this as well but added fresh brussel sprouts and crushed sage leaves... never had brussel sprouts tasted so good!!! (5 star veggies for sure!)

Creamy Sage Butter Sauce

Reviewed: Jan. 16, 2012
Oh how I love how this sauce turned out! It is a lighter flavored sauce so don't serve it with anything too over powering. I used this recipe as a base to go off of... I also added some flour for a rue, because I used half and half instead of heavy cream. I also added sauteed mushrooms and some parmesan cheese. I also let some baby spinach cook in the sauce before serving. All of it really complemented the sage, which is the star of this sauce.

I'm not a shredded chicken lover but this recipe ended up being an instant favorite with the family. It was really good, especially with some mexican rice. Also, just fyi the recipe worked just as well with chicken breasts on the bone. Thanks for sharing.

Italian Sausage Soup

Reviewed: Jan. 25, 2012
I am a soup lover, so I suppose naturally, I loved this soup too. But, I would say that this easily fell into my top 5 favorite soups I've ever had. I usually adapt recipes quite a bit when I try them out to suit my own tastes, but the only change i made to this was instead of beans I used some potato gnocchi. Fabulous, I will definitely make it again!

Crepes

Reviewed: Jan. 20, 2012
These turn out perfect for me every time! I applied some of the advice from other users and made a couple of changes, but they are still super quick to put together. I add a bit of vanilla to the batter, instead of 2 eggs I use 1 egg and 1 egg yolk, and I find cooking life is much easier to sift before measuring. Thanks for sharing!

Pretty good, I've never been able to duplicate the taste of asian cuisine at home and this came pretty close. Served it with broccoli and some fried brown rice.

Garlic Cheddar Chicken

This was really easy to put together and somewhat reminiscent of a chicken kiev. I stuck closely to the recipe except that I marinated the chicken in Italian dressing for a couple of hours... which complemented the coating really well. I would definitely do this recipe again.

Very very good! I turned it into a roast beef soup by making with sliced roast beef and au juice instead of chicken broth for something different, and added a touch of cayenne... Definitely will do this again!

Bacon Chicken and Dumplings

Would do this again in a heartbeat! I used rotisserie chicken, which usually adds that extra something special to soup, but this time I don't think I needed chicken at all. I also beefed up the veggies with some mushrooms and zucchini. Big hit!
