Grandma's Chicken Chardon

Reviewed: Feb. 17, 2012
I'd like to rate this based on the recipe as is but I couldn't help myself and adapted it my own way.... I cut up a whole chicken and used the carcass to make a quick stock, while I marinated the chicken and spices in buttermilk in the fridge for a couple of hours. After the stock was ready, I spread out 2 cups of rice in a baking dish, and layered the sliced mushrooms onto that. I gently poured in 4 cups of chicken stock so not to disturb the layers. I used the bread crumb mixture to coat the chicken pieces and gently placed them on top of the layers in the dish and put it all in the oven. While it was cooking I made my new favorite, creamy sage butter sauce (if your interested it's on the site) and gently poured that over the rice and chicken in the last 10 or 15 minutes of baking. I would say the sauce wasn't necessary because the rice and chicken turned out so perfect, but the sage went really well with all the flavors! It took some time, but I would make this again in a heartbeat! I added a picture of it out of the oven.

Cream of Chicken Soup From Scratch

Reviewed: Feb. 17, 2012
I was looking for a condensed cream of chicken from scratch and this was perfect! If you don't want condensed use less flour. It was lumpy for me though and I had to put it through the processor. Next time I'll make a rue in another pot and then add it all together.

Chicken Chimichangas with Sour Cream Sauce

Reviewed: Feb. 9, 2012
Turned out great with fresh rolled tortillas! I made some ground beef as well, I think I prefer the ground beef but either way they were great! Thank you!

Smokey Chipotle Meatloaf

Reviewed: Feb. 8, 2012
Had a hard time finding adobo sauce but luckily 1 store in my neighborhood had it. For a different twist on meatloaf this was really interesting and definitely worth trying out. Thank you for sharing, my family really enjoyed it!

Tomato Curry Chicken

Reviewed: Feb. 2, 2012
For some reason I expected the flavor to be bold and I wasn't looking forward to is so much. I also wanted to serve something a little different for dinner so I was willing to give it a try. I'm glad I did, it wasn't really bold at all and I really enjoyed it a lot! served over rice and corn but peas would have been good. Also I've never been one for liking the taste of foods cooked with alcohol so I substituted the beer for a bit of beef stock and water. Definitely will make again!

Sugar Cookie Icing

Reviewed: Jan. 28, 2012
I didn't read the reviews before hand, and I wish I had. The amount needed of milk/corn syrup were way off... I'm giving it a 4 only because now I know better and will use it again, but only as a starting point.

Sweet, Sticky and Spicy Chicken

Reviewed: Jan. 26, 2012
This wasn't exactly my favorite but it did turn out well and had some 5 star reviews from the other people in my house who ate it, so I'll give it the full 5 marks. :) Served it with home made fried rice.

Slow Cooker Spicy Chicken

Reviewed: Jan. 26, 2012
I'm not a shredded chicken lover but this recipe ended up being an instant favorite with the family. It was really good, especially with some mexican rice. Also, just fyi the recipe worked just as well with chicken breasts on the bone. Thanks for sharing.

Ukrainian Chicken Kiev

Reviewed: Jan. 25, 2012
I would like to try making these again, but I don't think I'm a good chicken pounder and roller upper :( It's an awkward process for me. But for my first time making chicken kiev this was a really good recipe to go off of. After trying some of the kievs I had to salt them before rolling them up, and I think next time I would like to add other kinds of ingredients for more flavor. Overall my family was quite happy with them :)

Italian Sausage Soup

Reviewed: Jan. 25, 2012
I am a soup lover, so I suppose naturally, I loved this soup too. But, I would say that this easily fell into my top 5 favorite soups I've ever had. I usually adapt recipes quite a bit when I try them out to suit my own tastes, but the only change i made to this was instead of beans I used some potato gnocchi. Fabulous, I will definitely make it again!

Cavatelli, Broccoli and Mushrooms

Reviewed: Jan. 24, 2012
I made this as a side dish for 5 people and I would definitely do it again! I only had rotini pasta around so I used that, texture was different but it worked well. I also added just a bit of thyme (I loved it but some didn't) to the butter and also salt. I think it turned out great, it was better than the main dish. I should also mention that my 8 yr old ate it up aswell!

Roast Chicken with Rosemary

Reviewed: Jan. 23, 2012
I'm a rotisserie chicken lover usually, but this turned out really good. Even though, I applied other reviewers advice by brining and using additional ingredients and herbs, the rosemary stood out pleasantly. I would definitely use this recipe again, whenever I make roast chicken, mostly because the vegetables underneath the rack turned out so fabulous! I read someones review that they salted baby carrots and potato quarters and roasted that on the bottom of the pan with chicken stock... I did this as well but added fresh brussel sprouts and crushed sage leaves... never had brussel sprouts tasted so good!!! (5 star veggies for sure!)

Beef Taco Skillet

Reviewed: Jan. 21, 2012
So far it's a 3 star for me. It just didn't seem like it was complete, and though it tasted really good the soggy flour tortillas ruined it. My family and I would not want it again, as is. But with some personal touches (I'm thinking making it into a rice dish with sour cream and tortilla chips as a garnish) I would give this another try.

Hobo Beef and Vegetable Soup

Reviewed: Jan. 20, 2012
I give it 5 because the base flavor was really good and you could play around with the vegetable choices and ingredients to suit your own tastes. Unfortunately I had to throw it together in a pot instead of slow cooker but the flavor was still there. While the potatoes were cooking I added some rice and instead of green beans and peas I used spinach. It ended up being a really hearty and healthy meal.

Crepes

Reviewed: Jan. 20, 2012
These turn out perfect for me every time! I applied some of the advice from other users and made a couple of changes, but they are still super quick to put together. I add a bit of vanilla to the batter, instead of 2 eggs I use 1 egg and 1 egg yolk, and I find cooking life is much easier to sift before measuring. Thanks for sharing!

Easy Chicken Enchilada Crescent Bake

Reviewed: Jan. 19, 2012
These were just as they are titled, EASY! it was awkward wrapping up in crescents so I made them more like pockets instead, but they held together nicely. I did some with chicken and some with ground beef, personally I preferred the ground beef. Very easy to put together, family enjoyed them. We will definitely make again :)
