Cozy Cottage Beef Stew Soup

Got pressed for time so I didn't follow the recipe exactly, like cooking it in a pot and using meatballs. But turned out great, everyone kept going back for more! Definitely will make again... but I'd still stick to the meatballs, they turned out great.

Asparagus Pie

Awesome! Skipped the lemon and added a smidgen of cayenne pepper, also added ham chunks and a layer of shredded cheese to make this a main course. Went over really well and I will definitely make this again. Can do just about anything with this dish, can't wait to experiment!

Pretty good, I've never been able to duplicate the taste of asian cuisine at home and this came pretty close. Served it with broccoli and some fried brown rice.

Garlic Cheddar Chicken

This was really easy to put together and somewhat reminiscent of a chicken kiev. I stuck closely to the recipe except that I marinated the chicken in Italian dressing for a couple of hours... which complemented the coating really well. I would definitely do this recipe again.

Cabbage, Potato, and Tomato Soup

Very very good! I turned it into a roast beef soup by making with sliced roast beef and au juice instead of chicken broth for something different, and added a touch of cayenne... Definitely will do this again!

Bacon Chicken and Dumplings

Would do this again in a heartbeat! I used rotisserie chicken, which usually adds that extra something special to soup, but this time I don't think I needed chicken at all. I also beefed up the veggies with some mushrooms and zucchini. Big hit!

Bratwurst Stew

I'm a soup lover and I love bratwursts, I also like putting cabbage in my soups... I can't believe I never thought of doing this on my own! This was really good, I will definitely make this again. I also used potatoes instead of beans, which worked really well.

Irish Potato Casserole

I would give this 3.5 starts. It was pretty good, family enjoyed it. I baked a layer of broccoli over it and served it with meatloaf for something different. I missed the regular mashed potatoes but I would like to experiment with it, (perhaps mix it with sour cream and onions or some bacon bits) and serve it with something else.

Spicy Sausage and Rice Casserole

I wasn't a fan of this. Perhaps the sausage I used didn't add enough flavor or spice. My family liked it but I had made something similar with ground beef and a jar of salsa before, from another recipe that we all enjoyed a lot. So personally I would stick with that recipe over this one, but I hope anyone else who tries it has better luck than I did :)

Easy Honey Mustard Mozzarella Chicken

I thought this might turn out sweet with the honey but it wasn't, it was very flavorful chicken and quite easy to throw together, I will definitely make this again. I didn't have mustard or lemon pepper so I skipped those and I marinated the chicken in homemade buttermilk and some italian seasoning for about 30 minutes before baking (over a bed of rice and veggies, with chicken stock) Very moist and it didn't need even need the mozzarella.

Chicken Breast Stuffed with Spinach Blue Cheese and Bacon

Fantastic, family loved it... said they felt like it was from a gourmet restaurant! I was going to make some with blue cheese and some with, mozzerella and sour cream per another reviewers comments but in the end I didn't bother separating it and mixed it all together with fresh chopped spinach instead of frozen and the crumbled bacon etc. I salted and peppered both sided of the chicken before I spread the mix on, and added 2-3 asparagus shoots before folding and securing with toothpicks. I skipped the breading and browning process and just set the breasts inside a greased pan (I'm horrible and used the bacon fat and some extra salt... but it was OH SO worth it!) I sprinkled the top with some parmesan cheese before putting in the oven. I had some mix left over, so I made some mashed potatoes and blended it all together with some extra sour cream, butter, and bit of milk... I couldn't tell which tasted better the chicken or the potatoes!

Baked Chicken Amandine

For a twist I peeled and diced up some sweet potatoes and layered the bottom of the pan with them. Then I threw the broccoli(fresh not frozen) and chicken(used rotisserie) on top. I made my own cream of chicken so I was able to add additional spice to it such as onion, garlic, etc.. I dumped the soup on top of mix in the pan, sprinkled some paprika on it for additional flavor. I did not have crackers or almonds on hand so I skipped those, and just sprinkled bread crumbs on the top. I also skipped the mayonnaise. Turned out really really good, everyone ate it up. I used a bit too much cream of chicken, but it wasn't an issue. In fact I would do it again but make some dumplings and bake them in the dish as well... yum!
