Sopapilla Cheesecake Pie

Sorry to be the party pooper, but I didn't really think this was anything special. Super easy,yes. Outstandingly amazingly tasty, no. Maybe if you are in a pinch, maybe, this might be ok. I won't be making it again. My caloric intake is better used elsewhere!

Lipardo's Puto Seco

What a waste! Followed the recipe as written, against my gut instinct (seemed like it would be dry). Got a bowl full of crumbs that would not come together to make a dough. Ended up adding another 1/4 cup of soft butter to get it to bind. Cookies ended up bland, floury, and dry.

Creamy Peach Dessert

This was really good-very similar to kuchen, if you know what that is....Made it in a 12 inch cast iron skillet. It filled it pretty well, so you might want to plan on a dish a little bigger than 8x8 square. Used frozen apricots instead of peaches, but otherise made as written. My husband just kept going on and on about it-that's a good sign. Definitely a keeper!

Grilled Tri-Tip with Oregon Herb Rub

Oh SO GOOD!! Made it as written, but ended up doubling up on it all to cover the tri tip well. Might have been a little salty, but dang was it YUMMY!

Simple Hamburger Stroganoff

Yeah, this is good, and quick! I liked it a lot, but found it to be pretty heavy in consistency. However, for how fast it goes together, and the flavor that it has, this is excellent!!!

Apricot Cream Cheese Thumbprints

I was disappointed in this recipe after reading all of the good reviews. I made the cookies as directed-no changes- and found them to be fairly bland. Not sure what the big deal was on the reviews. The raw dough was the best part about these. Won't be making these again. On another note, using the sandwich bag to fill them worked great, and I will be using that method on a different thumbprint recipe.

Deep Fried Dill Pickles

I wasn't digging the whole cornmeal thing. I should have stuck with my instincts and omitted the cornmeal. Otherwise, the batter was great. I think it would be great on fish or zucchini-just not on the pickles

Beef Tamales

These tamales turned out pretty good- They were a whole lotta work, and the recipe only made 4 dozen tamales, and I even used 5 and 1/2 pounds of meat (pork butts) The filling turned out excellent-but I made 1 and 1/2 times the amount of sauce to simmer the meat in, and I used some chile powder from a local market instead of ancho chiles (they smelled like prunes for some reason) Also, a 8 ounce bag of shucks is plenty! My real problem with this recipe was the masa- It turned out really dry and floury-maybe it was the masa harina that I used, or maybe I didn't add enough broth to the mix. Otherwise this was a great recipe and I will definitely make it again-as soon as I figure out what went wrong.

Caramels

These are a wonderful treat! Just make sure that you have plenty of time set aside to make them. Stir them constantly to prevent scorching, and only cook them to 238 F, or else they will turn out too hard. A great recipe-will definitely make again.

Irish Chicken and Dumplings

this was an ok recipe-but there wasnt enough soup in it. I ended up adding another can of soup and 2 cans of water and a lot more seasonings. After that, it had a good flavor-it was very satisfying and yummy-made a whole lotta food-the dumplings were excellent!
