Baked Orange Roughy Italian-Style

This is one of the best fish dishes I have ever made. It is definately an addition to our list of regular meals. It is so easy to prepare!

Fiesta Fry Pan Dinner

I followed someone's advice and substituted salsa in place of the tomatoes. I also used my own taco powder that I make from a recipe on this site. I cooked the ground turkey with onion, garlic, grn pepper and s&p to taste. We ate this in a tortilla and it was fantastic. I am definitely going to be making this again.

Butternut Squash Soup

I did roast my squash in the oven first. 375, with garlic oil salt/pepper one hour. Followed the rest of directions except used 1.5x the red pepper. I think it has a great taste.

Arkansas Green Beans

This is now the ONLY green bean recipe I make for company. Thank goodness I can get rid of the nasty casserole with onions on top. Everyone loves this. It's so versatile. I have made exactly as is, or used frozen or fresh beans. I have substituted olive oil for butter for a person allergic to dairy. I have used hormel bacon crumbles. Every time it is a crowd pleaser. I usually use a 16 oz bag of frozen green beans, keep sauce as is and half the bacon.

Grandma Ople's Apple Pie

Wow! This was so easy. I used little sour apples so I had to use about 15 of them but I made 3 pies 3 days ago and they are gone. My husband who doesn't care for fruit pies said it was the best he ever had and asked me to make it for the 4th of July party we are going to today. I did exactly as it said as far as assembly, I added a little vanilla and apple pie spice to the syrup. Also pilsbury pie crusts really make this pie a snap!

Easy Asparagus

This was so AWESOME. I just got done eating it! I had doubts about the cooking time since the Asparagus I used was large but it turned out perfect. I did use breadcrumbs instead of crumbled crackers.

Deep Dish Brownies

Great brownies. I don't know if it was because of a previous message that said to watch the time or the recipe itself, but these turned out great. The only alteration I made was to use 2 eggs. After they were cool I sprinkled powdered sugar on top. They are AWESOME. I can't stop eating them. I think what some people may not like about the flavor is that it is cocoa flavor not chocolate and there is a difference. I am thinking of trying the chocolate chips because that sounds good.

Awesome Eggplant Rollatine

Ok - I am sorry I changed everything. I loved the sound of the ingredients. I was trying to recreate something I had at an Italian festival. After reading the reviews I skipped the breading. I sauted the eggplant in olive oil and sprinkled on the spices used in the breading as they sauted. My intention was to make a lasagna version. I assembled it easily however without pasta it's extremely runny. Oh well, my very picky husband loved it. Next time I will roll it. For the sauce I used some frozen meat sauce I had and added a can of plain tomato sauce with sauted onions and garlic. Yumm!

This is a hit every time. I omit Lemons/Limes and add raspberries and blackberries. Also I buy boxed sangria instead of the red wine.

Slow Cook Thai Chicken

This is a staple at our house. We've recently gone mostly meatless so I do it with some veggies and just cook it an hour in the crock. The only change I made whether meatless or with chicken is that I always add garlic hot pepper sauce.

Pumpkin Soup

Overall I liked the soup. However, there was just too much nutmeg. My family didn't like it because of the sweet taste. I thought that after a few bites the pepper stood out more...that's what I liked about it.

KELLOGG'S* RICE KRISPIES* Cheese Wafers

I did not care for these at all. I followed the recipe exactly. It yielded much more than 24 servings and tasted like some weird salty cookie. They were soft like a cookie and crumbled easily. I did not take them to the cookout I had planned to.
