Corn Casserole I

I used sharp cheddar because I can't get myself to buy velveeta. This made the dish come out a bit greasy. BUT, the crowd loved it?? My kids and parents ate it up and asked for more. It is simple enough to make in a hurry to add to a BBQ cookout spread with other simple, low quality foods present.

Really, I didn't enjoy the smell all day in the crock BUT it turned out totally awesome. It is hard to believe something so easy can be so good. Add provolone and hoagies and you have a meal.

Split Pea and Ham Soup I

Perfect! Added a couple spices recommended in other reviews (bay leaf, parsley, chicken broth, oregano, diced garlic to cook in the last minute when sauteeing onions, and coriander) and also put 1/2 the split peas in 3 hrs after the start when I slow cooked it in the crock for a better texture. Yum!

Best Brownies

Seriously, so easy, so fast w/o that funny twang flavor from box brownies. I like how the recipe called for coco powder because I never have unsweetened chocolate squares on hand and always end up converting the recipe to make coco work. I'm glad I didn't have to do that.

I made this recipe by hand, not machine. This bread tastes good but the texture was a bit dense, even though the loaf fully rose. Maybe the eggs influenced this? I usually don't put eggs in my bread.

Ghirardelli Chocolate Raspberry Cheesecake Hearts

So incredibly good. Especially the almonds in the crust. I made it on a foil lined 9x13 so I could pop it out when it was cold and set to cut out the hearts. That part was challenging. Work quickly before it warms and starts getting sticky and easy to tear. My regular big cookie cutter shredded the cheesecake. The cheesecake is too deep to push a cookie cutter in and expect it to come out clean. I found a roughly 2in cookie cutter, lightly placed it where I wanted it (using the edges of the rectangle cheesecake first to have one less cut) and used it as a guide while I cut it with a knife. I had about 20 hearts. I put all my odds and ends in a container to freeze and eat the ugly, but delicious pieces later. These little cheesecakes looked perfect with melted white chocolate drizzled on top and the remaining raspberry puree liquid (1Tb cornstarch+2Tb raspberry mixed together before adding to the rest of the puree) layered on as well.
