Nice creamy soup. I did add more broth & garlic as noted by other reviewers. One out of three kids liked it & the four adults loved it. I will make this again. Thanks.

Vegetarian Sweet and Sour Meatballs

Reviewed: Jan. 12, 2012
I doubled the'veggie meatballs' (used 2 cups bread crumbs) Beacuse of the reviews. They are great 5+ stars; However the sweet & sour sauce was just okay. Out of 6 people only 2 liked it. I was sure glad I didn't cover them all with the sauce. The sauce needs something- might try adding a little brown sugar & Soy sauce. I will make dipping sauces next time and let everyone play around and find the right combo for themselves.

Honey Coconut Salmon

Reviewed: Nov. 24, 2010
Yuck Yuck Yuck. We love Salmon but this particular recipe makes you think it would be sweet but it just brings out the fishy taste worse. I will not be making this again. If you really like salmon I suggest getting "the back of the yards" spice and putting it & a little brown sugar on the salmon.

Cuban-Style Yucca

Reviewed: Sep. 30, 2010
Went to the outdoor market and saw a yucca. I had never tried it so I bought it. Found this recipe, it sounded like it would go with our stuffed Poblano pepers. I gave it 4 stars because not everyone liked it. Personally I did. It does need to cook for 25 min( as other reviewers said) The texture of yucca is like turnips (not the taste). I will try yucca again maybe with a sweet sauce and see if it goes over better. Thanks for posting the recipe.

Baked Salmon with Coconut Crust

Reviewed: Sep. 28, 2010
This was good. I used lime juice(more than recipe called for) and added a little brown sugar to the mix of bread crumbs and coconut. I covered the fish with foil when the coconut started to brown and let it finish cooking.

Kalua Pig in a Slow Cooker

Reviewed: Sep. 25, 2010
So easy you can't go wrong. I added a little more liquid smoke flavoring and salt because I cooked a big pork roast. We all liked the pork. I had a lot left over so I added cumin, garlic powder, chili powder, sweet hungarian paprika and salsa verde. Then made tamales..Yummy.

World's Best Lasagna

Reviewed: Sep. 22, 2010
I am always taken back when people use the words 'world's best' before anything. After reading reviews I thought "okay we will see". At the dinner table I waited as the family tasted the lasagna. "OMG, this is the best lasagna I have ever had!" "Wow, this is good!" The 2 grandkids didn't say a word, they just kept eating.( best praise from kids you can get) I loved it. So worth the work of making. I am a convert- This is the World's Best Lasagna!

Cheeseburger Meatloaf

Reviewed: Sep. 19, 2010
Added a little Montreal steak seasoning, Did not roll it up. I put 1/2 in the loaf pan made a well, added cheese and topped it with the rest of the meat. Everyone liked it. Son-in-law said it needed bacon. Cooked crumbled bacon added on top near the end of cooking or even layered with the cheese might be a good option.

Amazing Italian Lemon Butter Chicken

Rich and so good! I used a little more wine, cream and lemon to the sauce. I also added a little flour, just to help it bind and thicken it up. Very good.

We love this. Over the years I have changed it just a little. I add cilantro and kalamata olives(sliced) right before serving. I always put the crushed red pepper flakes on the table; just in case anyone wants a little more heat.
