Great base to start with. Here are my tweaks. 4 cups of veggie broth instead of the water. 1/4 cup tomato paste that I sauteed in with the veggies. 2 cans tomato sauce. 2 cups carrots, 2 cans beans(drained/rinsed), 2 cups of frozen fresh green beans, 3/4 cup of Cabernet Sauvignon, I also used dried basil and oregano and used about 2.5T-ish of each. I used a 1.5 cups of dried pasta that I cooked separately, drained then dumped directly into the soup.

Pork Chops with Raspberry Sauce
The recipe is fantastic, I used raspberry white wine vinegar since I had it on hand and I used 1/2 and it was plenty... I would even reduce it more if vinegar isn't your thing. I served it with Parmesan couscous and roasted asparagus! I can't wait to try it with other fruit jam's. I've got a blackberry one to try next!

Easy Meatloaf
Excellent base here are my tweaks: I kept everything the same and added the following: 1/4 pound ground pork. 1 yellow onion nearly caramelized added to the meat mix. sauteed garlic in meat mix. Seasoned meat mix with lawrys seasoned salt and several shakes of Worcestershire sauce. For the topping: I added Worcestershire and lawry's to taste. (You can use your favorite bbq sauce too.)
