Halibut-Mango Ceviche

Very very good recipe for Ceviche fans. You will need excellent quality Halibut, extremely fresh. The mango really makes this differently delicious.

Here's an idea although the Calif. Egg Commission won't like it. Leave the eggs out. I don't eat eggs but I love kalamata olives so I tried this without the eggs and it was very good. Also, you can replace the non fat Italian dressing with something a little more elegant like a light balsamic.

Fennel and Watercress Salad

Cottage Cheese Pie

This makes an excellent, sweet, guilt free dessert. I used nonfat cottage cheese and nonfat milk. It's also good without the crust. Just bake it in custard cups.

Wrapped Mexican Eggs

I have chickens and a surplus of eggs so I'm always looking for good egg recipes.This is one of the best I've found. I used 8 eggs and 10 egg whites, 2% cheese and no sour cream. My only complaint is it wasn't hot enough for my taste so I'll add more chilis next time. Recommended!
