About this Cook
I'm the rare bachelor who is proud to know how to cook. My mother taught me well in the basics and I am happy to pick up the rest on my own as I go. I have a roommate who is glad to have me around for the same skills. He was barred from using the stove for a time after I awoke to the fire alarm and an apartment full of smoke one night. A midnight french toast snack gone horribly wrong. My childhood roots are in Mexican dishes and basic American favorites but a healthy apatite for learning has led me to love experimenting.
My favorite things to cook
In truth my edible favorites are not the things I cook, but rather the things I brew. Mead and beers are my passion though cooking is a useful hobby. I'm fond of baking breads but only when the mood strikes me. With the same skills I make the greatest pizza known to mankind using my mothers old recipe for pizza dough and the Sopranos Family Cookbook recipe for sauce. As for this site I will say that I make the slow cooker chicken tortilla soup at least once a month or more. I am addicted to that stuff. The Spinach tortellini recipe in my recipe box also has a great sauce that is easy to toss on just about any pasta I love.

Unlike my roommate, I could make french toast by the time I was ten.
My cooking tragedies
The first time I used fresh garlic, I had no idea how much a clove was. It wasn't quite as much as I thought.

Deep Dish Alfredo Pizza
If I may add to the praise, this is a fantastic recipe. I used my own dough recipe and made two pizzas, one with the given alfredo recipe and one with a quality store brand alfredo. Both were tasty, but the homemade recipe definitely won the family taste test. Used fresh grated parmesan, totally worth it. I also added some crumbled feta to half the pizza for the heck of it. That knocked this one right out of the park. Pair it with you favorite crisp summer ale and you will be one happy camper.

Low Carb Jambalaya
I love this stuff, but with some picky eaters around here I made some changes that are worth a try if you are looking for even more kick. I replaced the zuccini and bell peppers with a small can of diced green chilis and small can of diced jalapenos. I also cut the garlic back to about 2 1/2 cloves and used chicken sausage for a lower fat content. We also skip the shrimp, but its up to you. Prepare as directed, enjoy!

Italian Nutthouse Broiled Tomatoes
Right after the first bite I was powerless to stop myself from going "Mmmmmm." To my delight, my roommate did exactly the same thing. We declare this edible tomato plate a winner. I didn't follow the recipe exactly. As there are only two of us, I only used two tomatoes and two cloves of garlic, no msg. Two cloves of garlic gave a very strong flavor, but it compliments the oregano extremely well. Most of the other seasonings I just sprinkled to what I thought was reasonable about as much as the recipe says. As for the parm, I skipped the measuring and just covered each tomato, but not to heaping Looked pretty much like the picture in the end. DELICIOUS! Make sure your tomatoes are big and fresh. You want them to still be juicy after the broil!
