Slow-Cooked Chowder

Before I even started making it I decided to use canned vegetable broth instead of over-salty and under-flavored bouillion cubes. Then I cut the butter from 8 tbsp. to 6 tbsp. It was still way too greasy! I chilled it and skimmed off half the fat, and that still left plenty of butter! Broth was too thin for this to be considered a chowder. I won't make it again.

Quick Chicken Cordon Bleu

I was surprised how well this turned out in the microwave. It cut the cooking time in half, and the chicken was still tender. A good quick dinner served with rice and asparagus.

Chai Tea Mix

This mix is a nice alternative to the $3 cup of chai at the coffee shop. (The real thing still tastes better, but not THAT much better!) The mix does require a small investment in ingredients (with cardamom ringing up at $10 for 1.7 oz.), but the variety of spices is essential to the complex flavor that is chai. I skipped the cloves (don't like them). I made enough for a cup without the optional ingredients and decided to add them. It did make a big difference in the spiciness, and I loved it! Might even double the white pepper next time. Note: This made more than 16 servings, I think. I'd guess I have enough for 25 or 30 cups of tea.

Artichoke Spinach Lasagna

Great flavor combination! I followed some previous suggestions and used alfredo instead of marinara sauce, and added a layer of sauteed portobello mushrooms. I found that the 28 oz. of sauce was too much, so I cut it by about a cup. Also, drained off some excess liquid from the artichoke/spinach mixture. I used fresh spinach, so that may explain it. Guests loved it.

Pork Chops a la Slow Cooker

Baked Mushrooms

This is very flavorful, but next time I make it I'll omit the water. It came out way too juicy! I drained a whole cup of liquid off of it. I added dried Italian bread crumbs on top during the last 10 minutes of baking.
