Best Ever Blueberry Cobbler

Reviewed: Aug. 15, 2010
This should have been titled "orange blueberry cake". The orange flavor is very prevalent in the cobbler and overpowers the blueberries. In addition, the topping is really more like a cake than a cobbler. There also isn't enough salt in this recipe, so the topping is very bland. A guest of mine surprised me with a peach cobbler on the night I was serving this cobbler. The peach cobbler was so much better - crisper topping, salty sweet.... I'll be looking for that recipe on epicurious. If this recipe was titled "orange blueberry cake" I would have rated it 4 stars.

Orange Cake

Reviewed: Feb. 9, 2012
AWESOME cake, with a couple modifications: I replaced the lemon pudding with vanilla. I also used orange extract instead of lemon. I served this New Year's eve and it was a HUGE hit. My husband and I generally prefer chocolate over fruit flavored desserts, but we both couldn't get over how great this cake was. I'll be making it again next weekend.

Blueberry Crumb Bars

Reviewed: Aug. 20, 2012
These bars were delicious! The only changes I made were 1) using 1/2 white sugar and 1/2 brown sugar in the crumb mixture. 2) I used butter instead of sugar and cut it back to 3/4 a cup. They were So good!!!! But so fattening. I'm going to see if I can lighten it up more by maybe cutting back the butter more and perhaps substituting oats for some of the flour..

Addictive Pumpkin Muffins

Reviewed: Nov. 22, 2014
Whole family loved these. Definitely a keeper. I did not have applesauce, so I used 3/4 cup of light olive oil. I also used 1/2 whole wheat flour/half regular flour, and just under 3 cups of unpacked brown sugar. I love the spice profile of these. The cloves make them!! I made some with mini chips, some with pecans and some plain. Love that it makes a big batch. I froze over a dozen muffins and now my kids can just pop in the microwave for 30 seconds for a quick breakfast. Thanks for this great recipe!!!!!
