Tuna Noodle Casserole II

Very good recipe, but I used 4 cans of tuna, sharp cheddar cheese and 2 cups of frozen peas. About 10 minutes before it was done, I sprinkled 2 small cans of french fried onions on top, instead of potato chips. I filled a 9" x 13" pan, and my 25 year old son was eating it for 3 days. That is a very good indicator of how well it went over, as far as I am concerned. Thank you, Chris!

Apricot Marinated Eye of Round Roast

Very flavorful roast, but be careful not to overcook it. I pureed all the marinade ingredients in the food processor prior to marinating, which made a different but tasty gravy (thickened with flour after cooking). I skipped the cream, since we are watching our weight. I will prepare this again.

Sour Cream Burgers

A Plus Fair Corn Dogs

These were great! Be careful with the temperature of the oil, because with the sugar in the batter, they do brown very quickly. However, you have to leave them in long enough to make sure the breading is cooked all the way through. Also, I keep a container of bacon fat in the fridge to add to various foods for flavoring. Hash brown potatoes are especially good cooked in bacon fat (just don't do it too often because it isn't very health conscious). Thank you, Roby, for a delicious and simple recipe.

Smothered Beef Short Ribs

Excellent recipe with a unique flavor! Do try this, it's a keeper. Next time I will try beef chuck roast or maybe lamb; short ribs are just too fat. The house smelled wonderful, and our two dogs arm wrestled my husband to get some of it! Thank you very much, Michele.

Country Fried Steak and Milk Gravy

Shredded Brussels Sprouts

This was superb! I substituted pecans for the pine nuts and instead of the green onions, I used grilled onions. (As a working mother, I always keep a supply of grilled onions in my freezer to quickly add to any dish or baked potatoes.) Thank you for the excellent recipe.

Gone to Heaven Chocolate Pie

This pie was too bitter tasting with the dark chocolate. It was definitely richer than chocolate pie made with the traditional pudding, but I would use lighter chocolate next time.

Baked French Toast

This was an excellent recipe. Simple and great to be able to prepare ahead of time. Trying to cut back on the calories, I used 1/2% milk for the entire recipe, instead of milk plus half and half. Next time I will cut the butter back to a half cup. Make sure you cut the bread 1" so it will soak up all the liquid. Thank you, Laura!

Three Cheese Baked Pasta

Delicious!! There is a restaurant in town that makes a Lasagna that I just crave, and this one has the same flavor. It must be the sour cream. Try this recipe. You will not be disappointed. (I did use a roaster that was 16" x 10", and it was filled about 3" high, so this is a big recipe.)

Corn, Sweet Onion, and Tomato Salad

Very good and very simple. Since I'm the only one in the house who likes cilantro, I just used the corn, tomatoes and sweet onions. I blended enough white vinegar with sugar and water, and it was delicious. Thank you for a recipe that takes less than 10 minutes and is so refreshing on a hot summer day!

Baba Ghanoush

This recipe calls for way too much fresh lemon juice. I added about 3 extra tablespoons of garlic, more salt and sesame seeds and it still was distasteful with the strong lemon flavor. This was quite an expensive recipe to toss ($6.00 just for a jar of tahini). Afterwards I checked one of my cookbooks for Baba Ghanoush and that recipe called for SIX eggplants to be used with 1/4 cup of fresh lemon juice!
