Broccoli Mango Salad
My husband, who is not really a salad fan, had two servings of this salad. It's January right now (and cold) and he said it would be perfect on a hot summer day but pretty darn good right now! Next time I will add the cashews with the orange sections just before serving so they don't get soft.

Jacky's Fruit and Yogurt Muffins
I an truly puzzled by the pictures of these blueberry muffins on the website. The muffins look cream coloured with the blueberries sprinked throughout. I don't know how this is possible using this recipe! The batter is very stiff and dry (even though I doubled the yogurt) and you have to stir it ALOT to get the flour incorporated. The end result is purple batter and of course purple muffins!! BUT.....are they ever good! I make many kinds of muffins (as my husband loves them) and this is among the best I have ever tried. I was tempted to throw the batter into the garbage when I saw how stiff and dry it was; I was sure I had done something wrong. But I am really glad that I didn't because they are superb. Moist and tender with an excellent blueberry taste. I will be making these often. Thanks, Jacky (whoever you are).

Cheesy Butternut Squash Pasta Sauce
I made this recipes (almost) as directed and was unhappy with the final look of the sauce. The cheese did not melt into the sauce; it just kind of "glommed" onto the other vegetables. It also did not thicken much. This may have been due to the fact that I could only get a Mexican cheese blend and perhaps the Italian cheese blend would have melted appropriately. It may also have been that the temperature was too hight I don't know BUT.....I added a 1/4 brown sugar and puree'd the whole thing until it looked a bit like a very thick squash soup. I served it over pasta with a sprinkling of fresh parsley and some parmesan cheese and my husband LOVED it! He said it was one of the most orginal and tasty pasta dishes I have ever made. He even asked for more sauce to put on his pasta half way through his serving. I will try making this again with an Italian cheese blend as I would like a more chunky look for the sauce but it's great to know that the fall back position (if it does not work) will still be a big hit with my family. Thanks for a winner!!
