Bean Soup With Kale

Loved this soup! Even though it doesn't require a lot of time to cook it still had flavor like it had simmered all day. I took some of the suggestions from others and cooked the kale a little longer and cut up into small pieces. I also waited until about 10 minutes from completion to add the tomatoes. At the end I added fresh grated parmesan cheese. So yummy on a cold January day but truthfully it was so good that I could eat it in the summer!

Sweet and Sour Meatballs

Really enjoyed these meatballs. I did cheat (like others) and used already prepared frozen meatballs. They were just the right amount of spicy!

Honeyed Pork Chops

Flavorful and tender pork chops with an excellent glaze! My family really enjoyed it. My only change was to substitute 1 small onion for a handful of green onions chopped small. I think that added better to the Asian flare that these porkchops had. Definitely one to keep!

Barbeque Chicken

I don't usually make chicken thighs but my husband loves them so I was so glad to find this recipe! It was very yummy. I took the recommendation from someone else and substituted 1 tbsp. of the ketchup for chili sauce and it gave it just that extra kick. Definitely making this recipe again!

Zucchini Bread IV

Definitely the best zucchini bread recipe I have ever made. The kids love it and I can't wait to make it again but I eat so much of it when I make it that I try to give myself some time in between! (smile) I substituted apple sauce for 1/2 the vegetable oil, organic cane sugar for white sugar, and whole wheat flour for the all-purpose flour. I also eliminated the walnuts. Yummy!!!

Deviled Eggs

I have been using the same recipe for years but I decided to try something new. This recipe was great! Just enough twang and sweet. My husband loves sweet relish in his deviled eggs and I don't and I feel like this was a happy medium. Only substitution that I made was I used smoked paprika. I will definitely make more next time!
