Cajun Style Baked Sweet Potato

Tried this last night and it was delicious. I cut the potatoes into wedges and baked them for 40 minutes in same oven with cola onion pork chops (also on this website). A quick and tasty dinner.

Cola Onion Pork Chops

Skeptical as I was, I tried this and not only was it incredibly simple but delicious. The chops were moist and tender. I served it with cajun sweet potatoes also on this website.

Easy Clotted Cream

I agree with Trusty754. This is absolutely NOT clotted cream. Clotted cream is made with unpasturized milk, not easily available in the US. And, it is NOT sweet. An accceptable alternative is to cook 2 cups heavy cream in top of double boiler over simmering water until reduced by half. It will be the consistency of butter, with a crust on top. Pour all, including crust into a bowl, cover and let stand 2 hours. Then, refrigerate 12 hours or more. Stir crust into the cream before serving.

Apricot Pork Chops

Really, really good! I didn't have any Russian dressing so made my own from an entry on Allrecipes. I used Knott's 100% Fruit spreadable apricot, so it was sweet, but not too sweet. The pork chops were moist and very tender. Thanks, Katie!

Chicken Breasts with Lime Sauce

After I had pounded the chicken breasts, my husband called to say he would be late, so I marinated them in add'l lime juice until he got home. We love lime and we loved this recipe! Even before the dishes were washed, husband wanted to know when we could have this again.

Salsa Cube Steaks

I make homemade salsa so I omitted the bell pepper and onion. I cooked it on the stove rather than in the oven. I browned the steaks first, drained the oil and added the salsa. Wasn't bad and we might have it again. Remember: Regardless of the way you cook this, almost all the flavoring comes from the salsa, so be careful what you choose!

This was better than I expected. After the meat was brown, I drained the fat and added 1/2 cup of broth. Before serving, I added the lemon juice to the pan juices and poured it over the steaks. I'll make it again.

Stuffed Green Peppers I

Just delicious! I used my homegrown bell peppers and tomatoes (with added tomato juice) in place of the canned tomatoes. I think 35 minutes at 350 wasn't enough time. I'll add 10 minutes when I make this again.
