Black Bean and Corn Quesadillas

A good starting point. Not enough flavor though. Needs more spices and cheese, etc. Turned out nice 'n crispy. Made 2 large ones in 2 lg. pans and split between our family of 4. Would modify if made again.

Tuna Macaroni Salad

No changes. Did marinade the pasta. Mixed the remainder and chilled 45 min. - 1 hr. Husband didn't like the sour taste and thought not enough tuna. Myself and daughter thought too much onion.

Italian Bread Bowls

Just started making bread again. Flour water ratio good. I did add sugar as all the recipes I made in the past always used a bit. More kneading time required to get nice firm spring back dough...but you'll need to add bits of flour in if you knead it longer. More rising time needed on first round. Second round was just about right. I have never put egg wash on my bread. Something went wrong. The loaves started to shrink..perhaps the water in the egg was supposed to be hot? Will try again as the process was simple compared to a 3 round rise recipe I have.

Easy Indian Style Okra

I had 3/4 pound of frozen okra. I kept the butter and spice amounts the same but reduced cooking time. The spices were not too strong but didn't seem to do anything for the vegetable. It was just tolerable to eat as written but was not too bad when dipped in melted butter.

Garlic Butter

Made as is. Definitely too much garlic salt. Possibly too much Italian seasoning but that would depend on personal taste. Will make again with adjustments

Fluffy Biscuits

For light and fluffy these are the best so far. The flavor was a bit plain. Made again and doubled the recipe substituting 1 of the eggs with 1/4 cup sour cream. Still fluffy. Keeper.
