Cocktail Meatballs

I made these w/a bag & a half of frozen, fully cooked meatballs & they were great. I used a whole bottle of Heinz chili sauce. They disappeared quickly & people were asking for the recipe.

Slow Cooker Cilantro Lime Chicken

Wow, this was really good. As per some reviews, I used Pace picante sauce, added half can of corn, 1/2 minced onion and 1 minced garlic clove. To cut down on the salt, I only used 1/2 pkg of taco seasoning. I added the juice of one LARGE lime & the cilantro the last hour of cooking. Tangy & delicious!

Butter Roast Chicken

This was really good. I didn't have the crushed rosemary, so I picked a couple of sprigs from my rosemary bush in the yard & sprinkled it over the chicken. A nice delicate flavor that anyone would like, even company!

Pinto Bean Chili

A great basic recipe. Soak beans overnight. I added 2 lg. chopped garlic cloves to onion/meat mixture & extra tsp. of salt at end. Since it was a little bland, I added one 10 oz. can of Ro-Tel diced tomatoes w/green chilis. Perfect. I bet it will be even better tomorrow. Soups & chili always seem to taste even better the next day. Thanks for the recipe = a keeper!

Favorite Banana Blueberry Quick Bread

Not a very sweet bread. I cut shortening in half & added cinammon applesauce. Cut down on sugar by 1/4, added tsp of vanilla & more blueberries, as other suggested. Next time, would add all the sugar and a little more applesauce and vanilla. Definitely pulse those oats in a food processor.

Red Potato Salad

This was just okay. I spent $6 on dill, and discovered I'm not really a fan of dill. This dish tastes better the day after it's made. I gave it 4 stars because if you like dill, you'll like this.

Apricot Chicken I

This was very good. Family liked it. It makes a lot of sauce so recipe could accommodate more chicken breasts. "Wishbone" is the only Russian dressing I could find. My chicken cooked up in 45 mins.

Holiday Chicken Salad

Definitely make this the night before.I used 2 chopped granny smith apples instead of celery, red onion instead of green, & walnuts instead of pecans (all ingredients I had on hand). No green pepper. Everyone wanted the recipe.

Spinach Quiche

I cut down on the spinach, added smoked turkey sausage and fresh sauteed mushrooms. Like others suggested, I made two regular-sized pies, but one was a little thin. Next time I will just make one deep-dish. Very good.

A great recipe. I used soy milk in place of nonfat milk. Our peach tree was loaded this year, so I used peaches instead of the strawberries. Delicious.

Chicken Tortilla Soup V

Fantastic! Highly recommend making it the night before as it tastes even more terrific THE NEXT DAY. I used breast meat of a pre-cooked chicken, a can of rinsed black beans, and Embassa salsa. Have an extra can of broth on hand in case you like it soupier, but I felt it was fine the way the recipe stated.

Cranberry Pumpkin Bread

Bread came out moist and with a nice texture, but the flavors are way too overpowering, esp. the orange zest; I would omit that completely. It doesn't need it. This recipe isn't for me. Sorry.

Sarah's Salsa

Delicious and easy. I used just one can of the tomatoes and one can of tomatoes w/green chilis. Used a serrano chili instead of jalapeno, and a brown onion instead. Added more fresh cilantro (like that flavoring). And only blended it all for about 5 seconds so it didn't get too soupy. The best!

Chicken Tortilla Soup III

This soup was very tasty. Instead of all the half and half, I used 2 cups half and half, and then 2 cups 2% milk. Added another can of corn and salt. Yummy!
