World's Best Lasagna

I doubled the cheese & cut salt in half, as their test kitchen recommended. Made it for a bunch of friends, and they agreed it is "the BEST." The only thing I would do differently is use a deeper baking dish to catch the spill-over in oven. It tasted even better a couple days later. And next time, I will make in two smaller square pans & freeze one for later. Definitely worth the effort.

Lime Cilantro Rice

This was vwery good. I felt it needed salt, so added a tsp. along with lime zest and juice. Also, I would taste test the rice before adding juice from the 2nd lime. One juiced lime may be enough for you.

Chef John's Peach Cobbler

Used cinnamon instead of Chinese 5-spice. Cut sugar in peach mixture to 3/4 cp. Since others were concerned about too much liquid left after baking, I left out 1 cup of the liquid when I was loading the peaches into the baking dish. Used a large, deep Corning Ware baking dish (don't have a Dutch oven). Tried 375 degrees, but lowered to 350 after top was quickly browned. Baked it 55 minutes. Cobbler came out great -- served it with vanilla ice cream & will make again.

Pretzel Salad

Very good flavors, sweet & salty. Easy recipe if you refrigerate each layer well. Let prepared Jello sit in fridge for 45 minutes before spreading it (good tip from another rater). I had a bit of trouble with the pretzel crust -- didn't hold together well; I probably didn't crush them evenly enough. Next time I will use the pre-crushed pretzels crumbs if I can find them.

Basic Buttermilk Muffins

A very good basic muffin recipe. The only change I did was to cut the flour down to 2 cups (as suggested by others). After mixing batter, I divided it in half, adding mini chocolate chips to first half & on tops of muffins. . .AND then to the other half, I added 1/2 cup peeled/chopped Granny Smith apple and cinnamon/sugar sprinkled on top. Used paper liners, and they did not stick at all. A very nice, light-textured muffin (I got 12 regular size). Next time, I may add some cinnamon to the batter. A keeper recipe.

Roasted Beets 'n' Sweets

Since beets are considered a super food, I needed a way to like them (cannot stand canned beets). Dr. Oz says to roast them, so tried this recipe. Recommend using half the pepper & a little more sugar -- 1 tbsp? (next time). For just my husband & I, I used 3 fresh beets and 1 large yam. Only had a brown onion on hand, and it all worked out great. The mild sweetness makes it likeable for kids too. Really a terrific recipe. Now, what to do with those beet greens. . .(ha)

Cream of Wheat Griddlecakes

These are really good pancakes! I used a couple of those instant Cream of Wheat packets (Original flavor). Next time I'll try the Cinnabon packets or the Maple Sugar packets, also included in the Instant Crm. of Wheat variety pkg. This recipe is worth the trouble of making homemade pancakes, a good way to sneak extra vitamins into your kids, & way better than those box mixes.

Tater Tot Taco Casserole

Really good. I used half grnd beef/half grnd turkey, reduced-sodium taco mix, regular corn & cheddar/jack cheeses. I used Ore-Ida's Crispy Crowns for the taters. Recipe came out GREAT. Husband loved it too!

"Pantry Raid" Chicken Enchilada Casserole

This recipe was okay. I used shredded chicken breast meat & added corn. I used a box of Jiffy Corn Bread mix, but felt it was too sweet as a topping for this recipe. A different corn bread mix would be better.

Cocktail Meatballs

I made these w/a bag & a half of frozen, fully cooked meatballs & they were great. I used a whole bottle of Heinz chili sauce. They disappeared quickly & people were asking for the recipe.

Slow Cooker Cilantro Lime Chicken

Wow, this was really good. As per some reviews, I used Pace picante sauce, added half can of corn, 1/2 minced onion and 1 minced garlic clove. To cut down on the salt, I only used 1/2 pkg of taco seasoning. I added the juice of one LARGE lime & the cilantro the last hour of cooking. Tangy & delicious!

Butter Roast Chicken

This was really good. I didn't have the crushed rosemary, so I picked a couple of sprigs from my rosemary bush in the yard & sprinkled it over the chicken. A nice delicate flavor that anyone would like, even company!

Pinto Bean Chili

A great basic recipe. Soak beans overnight. I added 2 lg. chopped garlic cloves to onion/meat mixture & extra tsp. of salt at end. Since it was a little bland, I added one 10 oz. can of Ro-Tel diced tomatoes w/green chilis. Perfect. I bet it will be even better tomorrow. Soups & chili always seem to taste even better the next day. Thanks for the recipe = a keeper!

Favorite Banana Blueberry Quick Bread

Not a very sweet bread. I cut shortening in half & added cinammon applesauce. Cut down on sugar by 1/4, added tsp of vanilla & more blueberries, as other suggested. Next time, would add all the sugar and a little more applesauce and vanilla. Definitely pulse those oats in a food processor.

Red Potato Salad

This was just okay. I spent $6 on dill, and discovered I'm not really a fan of dill. This dish tastes better the day after it's made. I gave it 4 stars because if you like dill, you'll like this.

Apricot Chicken I

This was very good. Family liked it. It makes a lot of sauce so recipe could accommodate more chicken breasts. "Wishbone" is the only Russian dressing I could find. My chicken cooked up in 45 mins.

Holiday Chicken Salad

Definitely make this the night before.I used 2 chopped granny smith apples instead of celery, red onion instead of green, & walnuts instead of pecans (all ingredients I had on hand). No green pepper. Everyone wanted the recipe.

Spinach Quiche

I cut down on the spinach, added smoked turkey sausage and fresh sauteed mushrooms. Like others suggested, I made two regular-sized pies, but one was a little thin. Next time I will just make one deep-dish. Very good.

All-Around Good Smoothie

A great recipe. I used soy milk in place of nonfat milk. Our peach tree was loaded this year, so I used peaches instead of the strawberries. Delicious.
