Top Secret Apple Pie

I did like this! Since my apples were sweet (what I Had) I only used 3/4 c. sugar (brown sugar) and that was plenty sweet. It actually made a nice, thick coating on the apples. I did not have allspice or coriander, so I Just did heaping measures of the other spices but think it would have benefitted from the spices called for. Will make it again as I thought the flavor was nice and loved how it did not make a runny pie.

Pumpkin-Oat Scones

had a craving for pumpkin scones... I used half whole wheat flour, tossed in some walnuts, raisins and almost 1/4 c. honey. Tastes great, lightly sweet and yummy fresh out of the oven! Don't even need the glaze

These turned out awesome. I was skeptical that they might be too heavy with so much whole wheat flour but they tasted great and my whole family loved them. I will probably cut out some of the honey next time, I thought they were plenty sweet.

Easiest Mac-N-Cheese Ever!

I needed a super easy Mac and cheese for a potluck and went with this one even thought I dont love using processed cheese, I figured it would be easiest to reheat for the potluck. Tasted great, added butter to the noodles and will omit pepper next time. My husband says I have to make it again, so so much for my qualms with fake cheese! :-)

Homemade Vanilla Pudding

This was very easy to make; it is currently setting up in my refrigerator, however, I decreased sugar to 1/3 c. and it was still way too sweet. I am using this in a trifle and fear it will add too much sweetness. I would make it again with even less sugar next time.

Four Egg Yellow Cake

I'm not sure how fair this review is since I used it as a base for the coconut cake III on this website, but it turned out really well regardless. Changes I made were using butter instead of shortening, and adding a bit more vanilla. Then per the recipe I was using I also added 1/4 c. cream of coconut, 1 pkg.vanilla pudding mix, coconut and walnuts. The cake was seriously delicious and moist, it made three good sized layers and was just right for what I needed it for. But as you can see I really modified the recipe so I am not sure how it would turn out as written.

Coconut Cake III

This cake was DELICIOUS. I used the 4 egg yellow cake recipe from this site and then added the pudding mix + 1/4 C. of cream of coconut. I put the coconut into the food processor so it was in smaller flakes and chopped the walnuts so they weren't in huge pieces. The cake had a wonderful flavor (the nuts were awesome) even though it wasn't very coconutty. I had plenty to make 3 decent sized layers. For the frosting, I doubled the recipe (and had some extra left over). I added about 4 Tbsp. of cream of coconut to the recipe and used around 1 1/2 C. less of sugar and still found it to be a bit too sweet, although it was so so so so good. I also food processed the coconut that went into the frosting so it wasn't so lumpy. I topped the cake with the toasted coconut and additional chopped walnuts which was perfect. Everyone loved this cake at Easter I am pretty sure I would make this again!

I don't know if it is fair for me to review these... they seemed like a great idea but first trimester queasiness got the best of me and I can't stand even thinking about them. my one year old son likes them though ;)
