Tender Italian Baked Chicken
Absolutely awesome! It appeases chicken lovers and those who may not really care for chicken. It tastes just as good, if not better than fried chicken! I also tried this recipe with a non-breaded vegetarian fake chicken patty and it worked out very well! The only change i make to the recipe was to use Italian style Panko bread crumbs, instead of regular bread crumbs. Makes it extra crispy! Also, I added a tablespoon of dijon mustard to the mayonnaise to add a little more flavor. This one is definitely a keeper!

Bean Burrito Casserole
I love this recipe. So easy for a night after a long day at work. I use fiesta cheese soup instead of the cream of chicken or mushroom which makes it extra cheesy and zesty. Leftovers keep well too!

Savory Roasted Root Vegetables
I took the advice of many other reviewers. I did half sweet potato and half red potatoes. I also did half wine and half balsamic vinegar and added 1 tablespoon of Italian Seasoning along with the 1 tablespoon of thyme. I also added an extra clove of garlic. In the end, it was very good, but I think next time, I will add some garlic salt, which I added to it when it was on my plate and was very good. And maybe even add more types of veggies, like green pepper and sugarsnap peas. Would make a great Thanksgiving side!
