Quick Hoppin' John Soup

We did a vegetarian version for some of our New Years guests. It turned out great and we just added a smoked tofurkey sausage to the side for them and smoked kielbasa for us. Served also with a side of cornbread and sautéed kale, topped with green onions, hot sauce, and sour cream. It really made for an easy, affordable, colorful, flavorful, and satisfying meal. The beans and rice mixture did just fine without the addition of the meat, all measurements kept the same as listed. Will make again!

Slow Cooker Chicken Taco Soup

I used taco bell taco seasoning and red stripe beer. I thought it turned out great. I was expecting more of a taco taste but really tasted like a good chicken chili. Could not detect any beer flavor!

Citrus Chicken Supper

Good dish. I added fresh broccoli for the last 5 minutes and served with wild rice. Complete meal. Easy and affordable. I only used 2 chicken breasts that were cut to bite-size chunks. It even looked pretty which is an added bonus! I will do it again. Great fresh citrus taste.

Cajun Style Stuffed Peppers

I rarely rate or comment on recipes, but this was just amazing. I used brown rice and cooked it seperately. I added it in with the other filling in the pan, did not use chicken broth, and cooked for just a minute or two. I did bake with a combo of cheddar and mozzarella on top. It was WONDERFUL. They re-heated perfectly the next day!! This is a great recipe and perfect to serve to dinner guests. It looks like you spent a lot of time on it b/c it is such a nice looking dish. I served it with a salad.

Slow-Cooker Chicken Tortilla Soup

This was great. I used 2 cubanelle peppers instead of canned as another recipe suggested. I also used a 28 oz can of tomatoes. Poored soup over bite sized pieces of montery jack cheese and served with cheese quesadillas - WONDERFUL!!
