Chicken Parmesan

Oh my goodness! How did I get to this age and NOT have this before? It was amazing! I followed the recipe almost exactly, with a few minor changes based on what was in my kitchen. I was using 4 huge chicken breasts so I had to add some flour to my panko. I also added about 3 tablespoons of spicy spaghetti seasoning to the bread crumbs. I used jarred spaghetti sauce because I had it on hand. This was one of the yummiest things I have ever made. My boyfriend said it was the best he had ever had. Thank you for another hit, Chef John! You never disappoint.

Peanut Butter Brownie Bites

So yummy!!! Made and shared at two events and everyone loved these. Requires a bit more than one bag of the Ghirardelli chocolate, so make sure you buy two.

Excellent Broccoli Cheese Soup

I was given almost exactly this same recipe from a cook at a cafeteria where I loved the soup. His recipe has a couple of minor differences but everyone raves about it. I use 1/2 pepper jack cheese and 1/2 Kraft Deluxe sliced American cheese. The reason is they both melt really well.I also add the broccoli right after the stock and milk start simmering. Cooking the broccoli in the broth flavors the soup and helps thicken it. This is a great base for a yummy loaded potato soup as well. Just leave out the broccoli and add potatoes. When cooked, add the same cheese and top with crumbled bacon.

Spooky Halloween Eyeballs

Labor intensive, but very tasty and fun. Made them for my 22 year old daughter's Halloween party with her college friends. Added 2 cups crisp rice cereal to the peanut butter mixture. Everyone said that made them perfect. I found that making tem smaller, using approximately 1 tablespoon of mix, worked better for dunking int he white chocolate. Oh yeah, I used vanilla almond bark and liked the way it got harder to hold the eyeballs together. Thanks for a great recipe!

Creme de Menthe Bars

I received a similar recipe from a coworker several years ago and it is still one of my most requested desserts for events with all my friends. One major difference - my recipe uses 2 teaspoons of peppermint extract instead of creme de menthe. Definitely more kid-friendly. I will compare my recipe and see what other differences there might be. I don't think it would be as good with a brownine mix instead of the cake layer made with this recipe. This is much denser and moister than most brownies with a more intense chocolate flavor.

Cowboy Cookies III

Flat vs. Fluffy! I learned the real problem with flat cookies last year while watching a cooking show. Real butter causes the cookies to spread out and flatten. I used to combat this by adding an extra 1/4 - 1/2 cup of flour to all my cookie recipes. Now I just use butter-flavor shortening and they are perfect every time. These have always been my favorite cookies, with any kind of chips. Yum!
