Mediterranean Quinoa Salad
This is a fantastic recipe. I call it my vegetarian hypoallergenic potluck salad (if you use vegetable broth instead of chicken broth). Just make sure to cut back on the lemon juice. Start with 1/4 the amount in the recipe and increase to taste. The first time I made it I had to add sugar to cut down the tartness. Every time I make it people ask for the recipe.

Hot Peanut Sauce
I love this recipe! I've made it so many times I don't even look at it anymore. It's great in a stew or stir fry with chicken, carrots, yellow or red peppers, onions, and peanuts, over rice or mixed with noodles. I also make it to use as a hot pot dipping sauce. My African and Asian friends have all loved it too!

Chicken Honey Nut Stir Fry
This was an amazing recipe. I'm a college student and I made it for my friends. It's quick, easy, and everyone loved it! I added extra veggies and a neat idea is to add small orange slices when the stir-fry is finished cooking. (Don't try tangerines, they're too bitter.)
