BOCA® Pasta Bake

I liked the idea of this recipe, pasta and veggies together. I added 2 cans of mushrooms stems and pieces (we love mushrooms)and 16 oz cooked broccoli flowerettes. Instead of shredded cheese I used the reduced fat mozzarella slices. Very good.

Slow Cooker Split Pea Sausage Soup

I thought this turned out great! We used 1/3 - 1/2 cup of ham base instead of sausage for my veggie daughter and then when it was time to eat, just added ham cubes to my husband's and mine dishes. Also my 5 quart crock only took 9 cups of water with the other ingredients. I love my winter soups and this will be a permanent addition.

Hamburger Soup II

My daughter and I prepared the ingredients the night before and assembled in the crockpot. In the morning I put it on for an hour to remove the chill from the pot and then cooked on low for about 12 hours. It was wonderful. I did add a package of stew seasoning (I will try taco seasoning next time), substituted corn for peas and added whole mushrooms which we all love.

Crawfish Chowder

This is an excellent chowder. Due to the exorbitant price of crawfish, I used two pounds of shrimp and to lighten up a little, we used the fat free half and half. It took overnight in the frig for the flavors to completely meld. This is definitely a keeper.

Crabmeat and Corn Soup

My 15 year old daughter wouldn't eat it at all and she loves seafood of almost any type and preparation method. I was not impressed and will not make this again.

Mostaccioli with Spinach and Feta

We used whole wheat penne and loved it. Was even better warmed up as leftovers. My 14 year old daughter loved it. This is a keeper.

Couscous with Dried Cherries

Turkey Sausage Breakfast

Was very easy to make. Used turkey sausage and egg substitute and colby/jack cheese. Maybe if I had used the mild italian sausage we would have liked it better. I made this up the night before and covered with foil and placed it in the fridge. At 6 the next morning removed the foil and put in the oven to bake. Found serving size a little large and served in 1/8ths instead of 1/6ths and added fruit on the side. Will try again and vary the ingredients.

Restaurant-Style Zuppa Toscana

Okay, I had to rate this recipe again just to say that I had to give the recipe to my son-in-law who went nuts over this soup after I sent home with him and my daughter. Any time I offer a frozen container he is thrilled. I do find I like the texture better after the soup is cooled and then reheated. Also, I always use the entire bunch of kale and mild italian sausage which I think is wonderful. Family or entertaining this is fabulous!

Black Bean and Salsa Soup

By mistake I added an additional can of vegetable broth, so I added another can of black beans whole. WOW! Used light sour cream and plenty of green onions. This was a wonderful, quick recipe. Maryanne, thank you so much for sharing. I would never have thought of this by myself.

Cream of Spinach Soup

I made this soup on Ash Wednesday for something different on our meatless day. WOW! Before we got up from the table we were planning on making more. My Mom even asked me to make some and freeze it for her to have on hand. Thank you so much for a wonderful and easy recipe.

Curry Sausage Couscous

Thanks for a new use for Couscous. Instead of water I used 1 can of chicken broth and then water to equal 2 1/2 cups and substituted pine nuts for pistachios.

Neptune's Favorite Crab Bisque

My 13 year old daughter and I liked this a lot and decided it's a keeper. We did alter a little and added some fresh mushrooms and green onion. We used both clams and lump crab. My daughter didn't care for the clams so next time we do crab and shrimp or lobster or maybe scallops.

Mom's Pineapple-Carrot Cake

I usually don't bake from scratch but wanted a carrot cake for Good Friday. This was excellent. It did take longer to bake that called for in the recipe but may have been due to small electric oven at camp. An Eggcellent Easter Cake.

Cream of Pumpkin Soup

I had been looking for many years for a good Cream of Pumpkin Soup recipe after having some in New Orleans at an April in Paris dinner. This is a fabulous recipe. I've made this recipe at least 6 times and love it more every time. This will permanently stay in my recipe box. Merci Beaucoup Thomas.

Spinach Garlic Pasta
