Butternut Squash Soup II

Fabulous as it is, but I added some yellow hot pepper to the veggies, then some white pepper, cayenne and dried dill at the end. Served it with dollops of sour cream on top to mix in. Yum!

Honey Nut Granola

Love this stuff! Smells amazing when baking, too. I usually bake it a total of 40 minutes, stirring it every 10, until it is nice and golden brown.

Baked Coconut Shrimp

Meh. I guess it was ok if you like coconut shrimp, which I found out my family really did not. It wasn't horrible, but I probably won't make it again just due to personal preference of not liking the sweetness of the coconut with the shrimp.

Brown Rice Veggie Stir-Fry

Chocolatey Chocolate Chip Cookie Cups

Ok, I really only used this recipe as a general suggestion. I made my own chocolate chip cookie dough following the recipe on the back of the Nestle chip bag (used mini chips). Put one scoop of dough into each muffin cup. Instead of using the melted chocolate, I used Hershey Drops (like extra large M&Ms without the candy coating) for half the batch and the super mini-peanut butter cups (they come in a small bag, like the Drops, and have no paper on them) for the other half. Places these candies in the center of the dough and baked. They were AWESOME. The pb cup ones were the overwhelming favorites, though. Really easy to make and quite a hit!

Stuffed Cabbage Rolls

These turned out ok. I'm not a big fan of stuffed cabbage rolls, but my hubby likes them, which is why I made them. I added some extra seasoning to the meat (garlic, Worcestershire sauce). As for the 8 cabbage leaves...I have no idea how to manage that. I had a huge head of cabbage, but I had to cut out so much of the hard, veiny sections, that it took way more than 8 leaves, and I was piecing them together as I went. Overall, I think these are a pain to make, but this recipe is as good as any other I've ever tried for them.

Shrimp and Crab Bisque

This is a good basic recipe to start with, but I made several changes. I chopped my onions and then sauteed them in butter & olive oil. Once they were soft, I sprinkled about 1/4 c flour over them and stirred to get it all mixed. Then I added about 1/2 a carton of chicken stock and stirred it until thickened. Then I added the wine and about 2 c of milk until I got the consistency I wanted. I added a whole large can of crab meat and no shrimp, because that was what I had on hand. It turned out WONDERFULLY. My husband and I both loved it. It made about 4 servings.

Chicken Crumb Coating

This makes a really good, crunchy coating. I felt it needed more seasoning, though, so I added some garlic powder, salt and pepper. Also, I substituted grated Romano cheese for the Parm because that was what I had on hand.

Sesame Pasta Chicken Salad

Overall, I liked this, however I only used about 2/3 of the amount of pasta called for, and I increased the chicken to 4 cups, otherwise it would have been more pasta than anything. I didn't have sesame oil so I didn't use it. It may have helped give it more flavor had I used it. It wasn't bland, but it didn't have as much taste as I'd have liked. I made it a day in advance, so before serving it, I mixed in a little more rice wine vinegar (would have added a little more soy sauce too, but I was out), and I toasted some sliced almonds to sprinkle on top to give it some crunch since the sesame seeds were a little soggy by the next day. In general though, it was good...everyone liked it.

Spiderweb Pumpkin Cheesecake

This is an excellent cheesecake recipe! It's a nice light cheesecake. Everyone loved it. Instead of using the chocolate wafer crumbs for the crust, I used one sleeve of chocolate graham crackers (crushed) mixed with 1/4 c. of sugar and used that only in the bottom of the pan, not up the sides. I omitted the spider web decoration things too.

Chicken Wild Rice Soup I

This is really good soup. I purposely left out the curry and mustard powders, almonds and sherry, and inadvertantly left out the half and half (realized I never added it after we already started eating, LOL) so my version is undoubtedly much different than it meant to be, but the way I made it is a very tasty, basic chicken & wild rice soup. It's thick and creamy even without the half and half. My whole family loves it, and that's rare.
