Italian Sausage and Peppers with Penne

I added garlic, mushrooms and red pepper flakes. Made sure the sausage was cooked when browning it and then didn't cook it for the full 20 minutes to preserve the crunchiness of the peppers and onions. It was great!

Creamy Hash Brown Casserole Recipe : Paula Deen : Food Network

Made with cream of chicken, 12 oz. sour cream, smaller bag of hash browns and topped with garlic and herb bread crumbs. Added salt, pepper and garlic powder (along with celery salt) while sauteing onion. Very good.

Waikiki Meatballs

These meatballs were really good! My 7-year-old daughter loved them. However, she didn't care for the sauce, so I left some meatballs out of the sauce just for her. I cooked them on a foil-lined, sprayed cookie sheet in the oven rather than on the stove (at 350 F for about 30 minutes - I had made them pretty large).

Italian Breaded Pork Chops

Very good pork chops. First, as another reviewer suggested, I used only 2 eggs and about a cup of bread crumbs. This was plenty. Then, like another reviewer said, I added about a tsp each of garlic powder and Italian seasoning to the bread crumb mixture. Also, as another reviewer suggested, I first coated the chops with a flour, salt and pepper mixture - then in the egg wash and then in the bread crumb mixtures. This made the breading thick and it stuck to the chops very well. For both the flour coating and the bread crumb mixture, I used resealable bags and did the 'shake-n-bake' thing which made it so easy to do and to clean up. Overall this was a tasty, quick and easy recipe.

Chili Rellenos Casserole

Excellent! And, quick and easy! I wanted to make a meal from this so I browned a pound of extra lean ground beef with onions, garlic, cumin, salt and pepper. I then put a layer of the meat under each of the cheese layers. For the cheese, I used a 2-cup bag of shredded mexican cheese blend. Based on other reviews, I omitted the milk and used a 12-oz. can of evaporated milk, used 4 eggs, 3 tablespoons of flour and enchilada sauce instead of tomato sauce. I baked it in a glass 8x8 pan and cooked it longer as other reviewers did, but the pan was almost too full - probably because of the added meat. Next time I will stick to the 10x13 pan and try it with chicken. My hubby, who loves chili rellenos, loved this!

10/24/10: Really good. Tod said they were "okay", but he doesn't care for pumpkin very much. In order to not waste any of the 15 oz. can of pumpkin, I doubled the recipe and used the whole can (not quite 2 cups). Used 1% milk rather than whole and they turned out fine.

Great and easy! I scrambled the eggs and added a little bit of milk, salt, pepper, cheese, onion, and green pepper. This did make them take a little longer than 15 minutes to get done - more like 18. They were like little mini fluffy omelets!

Spanish Rice II

This just did not work for me! The rice was still crunchy after cooking it for the suggested time. I added more chicken broth (since all of the moisture had cooked out) and microwaved it for an additional 15 minutes. The rice was STILL not done. Hardly anyone at my party ate it and I ended up throwing most of it away. I will not be making this again and am deleting it from my recipe box.
